- slightly brown the chicken cubes with onion and garlic in a large soup pot ( around 3 to 4 minutes)
- add all the rest of the ingredients simmer

Easy Chicken Taco Soup Basic Recipe
Just remember you can substitute ground beef, chicken, turkey for cubed chicken if you're taste buds want that ground meat taste.
This basic recipe can be adapted anyway you like, leave out things you're not fond of and add more heat an vegetables your family likes.
Easy Chicken Taco Soup
Ingredients
- 2 cubed chicken breasts you can also use cooked store-bought rotisserie chicken (or use 1 1/2 pounds ground beef, chicken, or turkey)
- 2 tablespoons olive oil or canola
- 3 cloves of minced garlic
- 1 small onion minced
- 2 - 12 cans of pink pinto beans rinsed or make freshly cooked pinto beans or (homemade beans cooked )
- 1 12-ounce can of kidney beans or black drained
- 1 28-ounce can of diced tomatoes with green chilies in juices
- 1 cup or more of frozen or canned corn
- 2 teaspoons chili powder
- 1 teaspoon cumin
- pinch of cayenne (optional) or as much as you like
- 1 - 1/2 teaspoons granulated garlic
- Note: the seasoning can be substituted with a package of chili seasoning
- Optional ingredients to add to your soup: 1 finely chopped bell pepper, 1 small chopped onion, 1 finely chopped stalk of celery, hot sauce, green chilies, cayenne pepper, jalapenos
Instructions
- Saute and chicken cubed with onion and garlic for around 3 minutes.
- Drain the fat.
- Add all the ingredients left and simmer for around 15 minutes on low heat.
- Pour into bowls and refer to the topping suggestions you prefer.
