Eggplant Hummus

This is the perfect party dip for any hummus lover with a combination of chickpeas and roasted eggplant it's a winning combination of flavors!


Just when you think you have had the best hummus ever eggplant roasted with lemon, garlic, and a little cumin, this dip is pureed bowl of pure heaven.


We also have made this a hot appetizer by adding some toasted breadcrumbs on top and Parmesan cheese so don't miss some of the alternative suggestions below.


This dip is great hot or cold and perfect for entertaining or as an appetizer before a big holiday dinner.


If you never tried a hot hummus dip before you're in for a real treat and I have several suggestions for making this with a delicious topping below.

Dips and Serving Ideas



Depending on what your serving assortments are, dips can be the perfect easy party to throw together.


I love to make four or five types of dips that will be perfect for anyone there.


The nice thing about dips is how versatile they are and can be made ahead of time!


Plus if you need something to take to a party this is the perfect easy dip everyone will rave about!

Ingredients you will need(exact measurements are in the printable recipe card below)


  • whole eggplant roasted
  • tahini paste
  • fresh garlic
  • lemon juice
  • cumin
  • chickpeas
  • salt
  • water
  • Optional: Check our assortment for serving ideas for dipping below and also for a little heat try some red pepper flakes

Other Addition:


  • 1/2 cup pureed or finely chopped artichoke hearts
  • shredded mozzarella on top the broiled before serving or another kind you prefer melted
  • diced kalamata olives to taste
  • chopped green or hot peppers or chilies
  • top with toasted breadcrumbs and parmesan cheese
  • for a smokier flavor broil the eggplant whole or grill it outside until charred

This roasted eggplant hummus is one of the best-tasting dips. Bake the whole eggplant which gives it a smoky, deep flavor that is just fabulous! Ready in 45 minutes, it's a flavorful and healthy dip recipe!

Ingredients

  • 1 large eggplant roasted
  • 3 tablespoon tahini paste
  • 2 tablespoons lemon juice
  • 3 or more tablespoons of water for desired consistency
  • 1/4 teaspoon cumin
  • 4 cloves of garlic or more
  • 1 teaspoon salt or more to taste I add pepper to mine also to taste
  • 1 -15 ounce can chickpeas drained
  • Optional: toasted breadcrumbs, grated parmesan cheese, or melted mozzarella on top for a baked hot dip

Instructions

  1. Preheat the oven to 400 degrees.
  2. Place the whole eggplant in the oven ( poke holes with a fork or knife in the whole eggplant and roast for around 35 to 45 minutes on a piece of parchment paper.
  3. Roast the eggplant until it flattens (in the preheated oven at 400 degrees hot oven).
  4. Cool and remove the pulp inside of the eggplant.
  5. Place all ingredients in a food processor:
  6. Pulse until this is nice and smooth.
  7. Serve with crackers, carrot sticks, or other raw cut-up vegetables.
  8. Great with pita bread also toasted made into points.
  9. Makes around 3 cups.
  10. Store in an airtight container in the refrigerator if you have any leftovers.
