One of my favorite fruits of summer is Bing Cherries and this loaf is one of the best cake-style quick bread I ever had.


It's actually hard for me to make this cake when I just about devour every cherry in the bag from the farmers market when in season.


Of course, if you're not a fan of this fruit, you can choose another, peaches diced, apples, berries, or another you like work fine in this versatile batter.


This recipe is a basic butter-style cake-like quick bread that is super moist and addicting, you just can't stop eating it.


You can adapt it any way you like but this is our number 1 favorite summer muffins along with Best Mango Muffins.

Natures Seasonal Fruit!




Cherries are in season for just a short time so take advantage of this delicious fruit.



I buy several pounds, then cut them up, pit them and freeze them so I can make these loaves all year long!



The loaves also freeze well if you make several. This recipe also makes great muffins!



This batter is great in mini loaf pans, donut pans, muffins and perfect for a quick breakfast when camping or traveling on trips.

Tips



  • Use another fruit you prefer, peaches, apples, pineapple, berries or any kind work great also
  • Chocolate chips, dried fruits, white chocolate, coconut, macadamia nuts or another kind you prefer can be added with the fruit
  • This batter can be used in muffin tins or a cake pan and adjust the baking time
  • Use an electric mixer, for creaming the butter and sugar, then only stir in the rest of the ingredients and fold in whatever fruit you use
  • Always test the middle with a toothpick, baking times vary on ovens, and correct temperatures
  • For easy removal in any pan line it with parchment paper

During the summer months, camping, picnic, trips to the beach quick breads are always the first snack I think of to make

Don't forget you can add dried fruits, or any berries, diced fruits or a combination or some of my other suggestions above to make a energy packed tasty loaf.

A delicious summer treat using fresh dark sweet bing cherries to make a sweet tender loaf quick bread style cake or muffins.

Ingredients:

  • 1 cup pitted bing fresh cherries sliced
  • 1/3 cup softened butter
  • 1 cup of sugar
  • 2 eggs
  • 3 tablespoons lemon juice
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 1/2 cups flour
  • 1 tablespoon freshly grated orange or lemon peel
  • 1/2 teaspoon salt
  • Optional Glaze after Baking:
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • Mix together set aside

Instructions:

  1. Heavily grease a loaf pan and I would also use nonstick cooking spray and flour or line a loaf pan with parchment paper.
  2. Heat oven to 350 degrees
  3. In a large bowl using an electric mixer, beat the sugar, butter together for a few minutes. 
  4. Add the milk, eggs, lemon juice till blended.
  5. At a little at a time, add the flour, salt, baking powder, and peel to this wet mixture until blended. 
  6. Fold in the cherries.
  7. Bake for 1 hour or until the middle is firm using the toothpick method.
  8. Cool 3 or 4 minutes and invert onto a cooling rack or wax paper before adding the optional lemon sugar glaze topping.

    1. yes the wet ingredients is to be combined with the dry...its in the first part of the recipe

  13. Are bing cherries the same as sour cherries? I know these are available for short period of time. This recipe looks and sound fantastic.

    1. no bing are burgundy in color and super sweet. They are my favorite beside Rainier Cherries which are the yellow ones and I would use those also in this recipe.
