Buffalo Chicken Chili

If you love buffalo chicken wings and are a hot sauce fan we have the best of both worlds quick and easy all in one bowl with our buffalo chicken chili.

This weeknight chicken chili recipe is easy to make, bursting with that buffalo hot sauce flavor, and if you were looking for something delicious and different for dinner everyone will want chili this way every time you make it.

The flavors in this chili are going to wow your buffalo wing lovers and are so much easier than standing over a hot vat of oil frying chicken wings the bonus is you can even make this in a slow cooker or instant pot.

We use ground chicken, cubed boneless chicken breasts, ground turkey,  or leftover cooked turkey breast and with just a few more ingredients like chicken broth and hot sauce, it's a powerful blast of flavors all in one bowl.

Of course, you can add the classic blue cheese crumbles on top and we even provide you with a list of suggestive toppings.

The best part is this gets all thrown together and can be ready in 25 minutes unless your using a slow cooker and have a busy work week.

Chili is Pure Comfort Food



I love this chili all year round it's also perfect for topping some tortilla chips with leftovers and smothered with extra sharp cheddar melted cheese.


During the week if we have leftover chicken, this is a perfect way to repurpose those leftovers, just add it in and reduce the cooking time even more!

Ingredients You Will Need 

  • ground chicken,(boneless cubed chicken, leftover turkey, or ground turkey)
  • green chiles
  • Roma tomatoes
  • fire-roasted tomatoes
  • fire-roasted green chilies
  • cannellini beans canned or fresh ( I use dried beans and cook them)
  • cumin, roasted or granulated garlic powder, chili powder
  • fresh garlic
  • chicken broth
  • extra virgin olive oil
  • chicken broth
  • garnish suggestions, olive tapenade, avocado, chopped tomato, chopped celery, any kind of shredded cheese, blue cheese crumbles, sliced jalapeno peppers, blue cheese or ranch dressing, tortilla chips

Cooking Methods

  1. The stovetop simmered for 25 minutes
  2. Instant Pot : Saute the chicken on sear mode, then  dump all the ingredients with an additional 1/2 cup low sodium chicken broth then choose the pressure cooker mode set to instruction book ( cooking around 15 minutes)
  3. Slow cooker/crockpot : Sear on the meat on the stovetop, dump all the ingredients in set on low 6 to 8 hours or high heat 4 to 6 hours

Toppings

  • any kinds of sliced olives
  • any kinds of shredded cheese or queso
  • chopped onions, jalapenos, diced tomatoes, diced peppers
  • sour cream
  • avocado slices or guacamole
  • salsa

  • crumbled bacon
  • tortilla chips, or crackers
  • blue cheese crumbles
  • blue cheese dressing or ranch dressing

A Few Tips


  • Hot sauce is high in sodium so we don't add extra salt, that's to your taste but for us, it's salty enough. 
  • I always like to use fresh beans boiled, if you're using canned rinse them really well to get all the salt off. 
  • If I don't have any homemade chicken broth you can actually boil the chicken you're using first in 3 cups of water and simmer( strain it and use the fresh broth) and use this instead of canned.
  •  Make this a fun chili party for a crowd and have a large platter of assorted toppings for them to build their own and several shredded kinds of cheese with tortilla chips.
  • We have used boneless chicken breasts and leftover turkey from the holiday and it's delicious using leftovers including rotisserie chicken. 
  • Not a bean lover? Substitute rice for beans, elbow pasta cooked, or just add more meat!
  • This freezes well in ziplock bags or containers for up to 3 months and will stay fresh for up to 3 days in the refrigerator

Buffalo Wings the Easy Way Out



If you want to take the easy way out and a buffalo wing lover nix the frying, make this it's the perfect recipe solution, with all the hearty flavors, and nothing but easy ingredients in a hurry.


I do recommend that meaty chicken lovers use boneless chunky chicken breast meat instead of ground chicken.

You can add cooked cubed chicken, a rotisserie chicken off the bone, or any other meat you choose to add instead of ground chicken, to satisfy a hungry crowd of buffalo hot sauce lovers.


We love it either way, but everyone knows their food preferences chunky style chicken chili or ground it's fabulous!

Buffalo Chicken Chili

Buffalo Chicken Chili

This is a favorite for my buffalo chicken lovers out there. The chili is bursting with hot sauce, fire-roasted tomatoes, chilies and loaded with chicken that will satisfy any fan!

Ingredients

  • 2 pounds of ground chicken or 2 large cubed boneless chicken breasts
  • 1 tablespoon minced garlic
  • 1 teaspoon roasted garlic powder or granulated garlic powder
  • 3 fresh Roma tomatoes chopped
  • 1 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 2 cans (around 15 ounces) of white cannellini beans drained or use fresh boiled beans from dried
  • 2 cans (15 ounces) of fire-roasted tomatoes
  • 1 can (4 ounces) fire-roasted green chilies (I used mild)
  • 1 can (12 ounces) low sodium chicken broth
  • 1 cup Hot Sauce (we like Frank's)
  • salt and pepper to taste
  • olive oil
  • Note: I didn't add any salt the hot sauce has enough sodium to me it was perfect without it, however, I did add 1/2 teaspoon of black pepper.
  • Garnish Suggestions: sour cream, avocado, black olives, tortilla chickens, jalapeno sliced peppers, chopped tomatoes, blue cheese dressing or ranch, chopped green onion, chopped celery, crumbled blue cheese, shredded cheddar cheese

Instructions

  1. In a large deep soup pot, add 3 tablespoons of olive oil and saute the chicken until all the pink is gone.
  2. Add all the ingredients, stirring in the beans last.
  3. Simmer covered for 25 minutes.
  4. If you would like it thicker add 1 tablespoon cornstarch mixed with water or use masa and water.
  5. Garnish with any of the toppings you prefer.
