This Sheet Pan Parmesan Italian Sausage Medley is loaded with a delicious Parmesan breadcrumb topping and the only recipe you'll ever need.

Our favorite sheet pan has a medley of roasted potato wedges, Italian sausage, tomatoes, and peppers and we mix and match with other vegetables to create a new dish every time (suggestions below).

Italian herbs, cheese, and sausage infuse the perfect blend of flavors to make this fantastic seasoned sheet pan scrumptious.

The potato, peppers, sausage, and tomato Italian herb-crusted cheese topping is simply addicting in our one-pan meal.

Our dish a classic favorite in our family for more than 55 years and is even perfect for bringing to a potluck or hosting a party!

This Italian comfort meal is so easy that takes less than an hour and supper will be on the table served all in one pan with no fuss.

Step by Step Sheet Pan Roasted Parmesan Italian Sausage Medley

  1. Prepare a sheet pan with parchment paper (you  can use a porcelain-coated pan just oil spray it to keep the potatoes from sticking)
  2. Preheat the oven to 400 degrees
  3. Layer the cut potato wedges first
  4. Add the peppers, tomato quarters, and the Italian sausage last
  5. Top with breadcrumbs evenly, cheese, salt, pepper, herbs, and spices, and drizzle with olive over the top
  6. Bake for 35 to 45 minutes or until everything is golden brown and potatoes are fork-tender (this can take longer depending on how thick you cut the vegetables)

  • sausage sweet or hot
  • peppers any kind bell, hot, roasted 
  • potato wedges
  • fresh plum tomatoes
  • breadcrumbs
  • Parmesan cheese
  • granulated garlic powder
  • dried basil, parsley, and oregano
  • salt, pepper
  • fresh garlic cloves peeled
  • fresh basil leaves
  • olive oil or other oil you prefer

Just a Few Tips



  1. Use sweet, mild, or hot sausage (we make mom's recipe)
  2. The best potatoes to use are russet potatoes
  3. The peppers can be Cuban, long hots, or bell peppers, roasted in any color
  4. To use less oil use a cooking oil spray or a blend of oil like olive oil and vegetable or canola when baking
  5. This meal can also be done on the stovetop in a large dutch oven pan. Frying the sausage first to brown in oil, then add all the other ingredients. Broiling the topping last until crispy on top

Italian Classic Casseroles and Modern-Day Sheet Pan Recipes


Back in the 1950s mom made this and it was called a casserole, not a sheet pan, maybe you remember that reference.

Her casserole would be layered with whatever vegetables we had, homemade sausage she would make, and topped with cheeses sometimes mozzarella and tomato sauce.

This is a basic recipe that can be adapted any way you like, onions, peppers, potatoes, tomato sauce, and loaded with cheese make a pizza-tasting casserole of deliciousness!

This sheet pan potato, peppers, sausage, and tomato Italian herb-crusted cheese topping is a fantastic one-pan meal

Ingredients

  • Note: Adjust quantities to your family size this is just a guideline:
  • 2 lbs of Italian hot or sweet sausage ( around 4 large links)
  • 4 fresh plum tomatoes cut in quarters
  • 3 cloves sliced fresh garlic
  • 3 or 4 Potatoes cut into wedges ( I use russet)
  • 3 or 4 bell peppers, long hots, or any kind you prefer
  • Optional: Onions, mushroom whole, artichoke hearts, sundried tomatoes, escarole or spinach boiled and drained, and any other vegetables you like
  • 1 teaspoon oregano or more to taste
  • 6 fresh basil leaves
  • olive oil
  • 1/2 cup Italian-flavored breadcrumbs
  • 1/4 cup of grated Parmesan Reggiano, Pecorino Romano cheese, or Parmesan/Romano blended cheese (use more if needed sprinkled evenly over the top)
  • salt and pepper to taste (the cheese usually is enough salt, however, you can adjust to your preference in salt flavor)
  • Optional: red pepper flakes or cayenne pepper to taste

Instructions

  1. Prepare a sheet pan with parchment paper.
  2. Preheat the oven to 400 degrees.
  3. Cut the potatoes into wedges.
  4. Slice the peppers and quarter the tomatoes
  5. Layer the cut potato wedges first
  6. Add the peppers, tomato quarters, and any other vegetables you prefer to use.
  7. Place the Italian sausage links on top last.
  8. Top with breadcrumbs, cheese evenly, herbs, spices, salt, and pepper, and lightly drizzle with olive over the top
  9. Bake in a preheated oven of 400 degrees until everything is golden brown and crispy on top and the potatoes are fork tender ( around 35 to 45 minutes depending on the thickness you cut them this can take longer).
