Broccoli Cheddar Baked Potatoes

These Broccoli Cheddar Baked potatoes remind me of the potatoes I ordered for lunch which was a popular menu item in that restaurant back in the 1980s.

Our recipe for these potatoes is first boiled, topped with steamed broccoli, and covered in a homemade cheese sauce (or you can make the quick version in our recipe card at the end of this post).

We made a quick version of the cheese sauce using a can of soup, however, we also will give you a homemade delicious ready when you're not in a hurry.

The potato can be a great little lunch or a side dish for dinner and both the quick and homemade versions are delicious.

Easiest Broccoli Cheddar Baked Potato

  1. cook the potatoes first
  2. split them lengthwise
  3. scoop them out and season the potatoes
  4. fill them back up
  5. top with cooked broccoli florets and cheese sauce
  6. heat for a few minutes in the oven
  7. Note: we have tips for crispy skins in the recipe card at the bottom of this post

Easy Vegetable Substitutions for Broccoli Cheddar Potatoes

  • steamed asparagus
  • Asian medley
  • stir fry
  • leftover peas, carrots, creamed corn
  • sauteed spinach leaves

Tips and Suggestions for Making Broccoli Cheddar Potatoes

  • Scrub and wash the potatoes first
  • Always pierce the potatoes to keep them from exploding if microwaving
  • Potatoes with a green tint are old, and they are past their prime. You should pick potatoes that are even in size and those that have that consistent brown skin
  • Add whatever you like in the potato mixture for the jackets
  • Skin will not get crispy, for crispy skins bake the skins after scooping out the filling before filling with potato mixture
  • There are several toppings for baked potatoes and become a whole meal see our topping suggestions below and you can set up a serving topping bar for hosting a party 
  • For faster cooking methods instead of boiling them, use the microwave
  • Note: If you prefer crispy jackets, spray with cooking oil and place in the oven for 11 minutes at 400 degrees or longer for crispy skins. fill add toppings, then bake

Baked Potato Additions

  • add bacon bits
  • add cream cheese to the potatoes
  • add heavy cream or half-and-half
  • add granulated garlic powder
  • add chopped dill or assorted dry herbs
  • season with salt, pepper, and hot sauce for a spicy filling

Broccoli Cheddar Baked Potatoes

Popular baked potatoes topped with homemade cheese sauce and broccoli. A 1980s restaurant copycat.

Ingredients

  • 2 cups of cooked broccoli ( cooked by any method fried, boiled, steamed or microwaved)
  • 4 Russet potatoes
  • Cheddar Cheese Sauce:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup half and half
  • 1/4 teaspoon of Worcestershire sauce
  • 1/2 teaspoon granulated garlic powder
  • 1/4 teaspoon Dijon mustard
  • 1 cup extra sharp cheddar cheese off the block shredded

Instructions

  1. Instructions for Making Potatoes Topped with Broccoli and Cheddar Cheese Sauce
  2. Scrub the potatoes and remove any dirt.
  3. Fill a 5-quart saucepan with water, and a pinch of salt ( a pan big enough to fit 4 potatoes), boil them for 11 minutes then drain and cool to warm.
  4. Alternative: microwave on a safe microwavable plate for 11 minutes, and cool to warm before slicing the potatoes.
  5. Cheddar cheese sauce (or use a can of cheddar cheese soup heated)
  6. In a medium saucepan, add the butter and melt it.
  7. Stir in the flour and mix it until a paste forms.
  8. Add the milk and do not bring it to a boil just warm it on low heat.
  9. Add the Worcestershire sauce, mustard, garlic powder, salt, pepper to taste, and cheese.
  10. Stir together until cheese melts on low heat.
  11. Cooled Potatoes:
  12. Cut the potatoes lengthwise and scoop out the potatoes into a bowl.
  13. If you prefer crispy jackets, spray with cooking oil and place in the oven for 11 minutes at 400 degrees or longer for crispy skins.
  14. Filling for the Potato Mixture:
  15. The filling can be plain with 2 tablespoons of butter, milk added until it's a fluffy consistency and not too thick around 4 tablespoons, then salt and pepper to taste, or use some of the additional suggestions under notes.
  16. Fill the jackets with potato mixture and set aside.
  17. Cook the broccoli using whatever cooking method you prefer.
  18. Assemble the Potatoes:
  19. In a casserole dish, place the filled potatoes in the dish to fit.
  20. Top with the broccoli then add the cheese sauce or soup.
  21. Bake for 4 to 5 minutes at 400 degrees just until heated or you can microwave them for 45 seconds each.
  22. The Quick Method:
  23. Microwave the potatoes until cooked. Scoop out the filling and seasoned to taste. Top with cooked broccoli and cheddar cheese soup. Heat in the microwave until warmed and heated through
