Italian Utica, New York Greens, was a staple growing up in the 1960s in my home. Mom made them all the time, simple, sauteed in olive oil, freshly minced garlic, salt, and pepper as a side dish.
Later on, in the 1970s, they were on almost all the menus in Utica and surrounding towns for a breakfast side dish with eggs or for dinner.
Then in the 1980s a new way to make them became famous in my hometown by Joe Morelle, who created another style of greens that were amazing and great for a whole meal with his delicious additions.
Greens became more widely known as "Utica Greens," it has become commonplace, in modified versions, in Italian restaurants throughout Central New York, and even migrated to New York City, Las Vegas, and Florida.
My hometown has so many wonderful creations and often referred to as Little Italy for some many ethnic authentic dishes, some famous for just the area like Greens and Beans, Tomato Pie, Italian Greens, Italian Lemon Ice, Pizza Fritta, Chicken Riggies, Manny's Cheesecake, Oscugnizzo Pizza, Pusties and Rosato Chocolate Cookies.

This is a recipe for using Polenta for a basic crust to make pizza or appetizers.
You will find many various suggestive toppings in the recipe using either alfredo sauce or marinara on top.
Polenta when thick can be cut into various shapes with cookie cutters for appetizers, left in a sheet for pizza, or simply cut into small squares.
The crust is easy to make on the stovetop then baked with a delicious sauce and melted cheese.

I am an expert on spicing up red beans and rice instantly in this easy Italian style recipe version!
This is something easy to make come out perfect and a great side for meat meals.
I have seen the prepackaged ones in the store and seriously, to me they're tasteless.
I like to make beans in a slow cooker overnight, then have them in the refrigerator during the week, make some fresh rice, and viola, a great side dish for any meal in no time.
This is a tasty simple side dish you can doctor up or leave plain.
My family loves this without all the additives but you can adapt it to anything you're accustomed to.
I will give some suggestions below of additions that I like myself.

Grandma born and raised in Rome, Italy made what was referred to as a butter and cheese white sauce over homemade macaroni which was her version of fettuccine alfredo.
Today in America, Restaurants have adapted this plain style delicious pasta dish that originated in Italy, by adding cream and what we call alfredo sauce here in the US doesn’t exist in Italy.
This is a totally different style Alfredo that came from Italy and originated there by a man who named this dish after himself.
If you are looking for the American version, you will need to add heavy cream to the recipe as this is not that style recipe.
This is an original recipe from my grandmother who lived to be 94 years old came was how her Region in Rome, Italy, and how her family taught her to make it.

When you taste this Baked Ravioli Lasagna Casserole, you're going to wonder what took you so long to think of this one it's so easy and perfect for any weeknight or weekend meal to free up your time!
The recipe is so simple and it starts off with frozen ravioli and a layered delight that comes together quickly this is either done in a slow cooker, stovetop or baked in the oven so you can save time with all our cooking methods below!
Of course, you can make my homemade ravioli recipe, but we use the frozen ones, and are perfect for this recipe!
Tomato sauce, mozzarella cheese, loose seasoned ground beef, or sausage can all be store-bought or homemade using frozen meatballs crushed to save time.
This whole ravioli casserole meal can be done in less than 35 minutes by baking in the oven.

You will don't need anything more than meat with tomato sauce and cheese!
The other option is to use meat-filled ravioli and then add a layer of ricotta.

This is one of my favorite appetizers I first had at a 5 Star Italian Restaurant and so delicious for all the olive lovers out there.
It's really an addicting starter for any meal, served as a topping on crusty bread or crudités.
It may be used as a condiment, as well on salads and some grilled meats.

Olive tapenade is loved in southern France but originally comes from Italy.
While the word and the tradition come from Provence, the first written recording of eating tapenade was made by Italians in the first century AD, and Cato the Elder included a tapenade recipe in his book On Agriculture.
This is a simple easy way to make it for dinner parties or just as a delicious snack any time of the day, and leftovers make a perfect topping as suggested previously.

This is the old fashioned back in the 1960s on how Grandma and her mom made freshly picked fried zucchini.
Grandma always fried everything!
She would make these when we had a huge abundance from dad's garden in our Upstate Utica New York home in the summer.
As time went on through the years we have Baked Zucchini Fries, Air Fried, and still have to make them Grandma's way once in a while for a treat on the stovetop fried.
Zucchini is one of those favorite vegetable Italians love because it's so versatile.
From sweet zucchini bread like Chocolate and Regular Zucchini Bread to savory zucchini recipes like Zucchini Rollatini, you sure can use up zucchini in many wonderful and delicious ways.
These fried zucchini chips are so simple to make and really like eating popcorn, they're truly addicting and our family never has enough.
If you happen to have any leftovers, just layer the rest of the marinara sauce you may have dipped them in with some mozzarella and make a sandwich!

Here is a Grilled Blackened Chicken Breast that is fork-tender with a little kick and fabulous!
The recipe is super simple with a coating that seals in the spicy juices and dipping sauce set aside for dipping it after grilling!
If you love chicken, you will love this delicious way to prepare your chicken breasts (and just remember what blackened means if you don't already know, it's just food blackened no it isn't burnt it's simply coated in a special spice blend that takes on a very dark brown, almost black color when cooked in a skillet, on a grill or in an oven).
This recipe tastes great and can even be cooked on a cast-iron skillet on the stovetop that is gridded because it does leave those grill marks and is perfect for wintertime when grilling isn't possible.
The secret ingredient used in this recipe improves any meats and seafood every time and adding a little seasoning is going to be a spectacular tasting on these chicken breasts!

This is the best ever Boston butt pork roast in a slow cooker.
This Boston butt roast might take a few hours but it's oh so worth it!
The first time I made this, the smell of it cooking was overwhelming delicious that it made my mouth water.
I love using a slow cooker, it makes everything moist, juicy and it's so easy to cook in!
Every kind of meat always is spot-on perfect, no worry about a tough piece of meat or dinner ruined with my cooking methods.
The best part is if there are any leftovers you can turn it into pulled pork using my Jack Daniels sauce recipe for sandwiches or use it to make fried rice for another meal!

I actually forgot about this recipe mom made often back in the 1970s when we had unexpected company.
I never knew how easy it was until I started baking myself.
This is always one you need to keep on hand for potluck, picnics, and spur of the moment dessert to bring for a dinner party.
This vintage recipe was always made with cherry pie filling and a box of yellow cake mix.
Also in the notes in the recipe card you will find the alternative for using fresh peaches and instructions for a summer fresh treat!
Now, with all the innovative flavors, I used a few different ingredients and came up with our favorite fruit dump cake using a spice cake.
Everything gets layered hence the reason for things dump cake, and there is no mixing involved!

Zucchini make this bread sticks moist and soft and are perfect for dipping into marinara sauce..

Polenta is really a dish, not an ingredient, from northern Italy and started somewhere around the 16th century as peasant food.
It resembles a porridge or mush and is made from coarsely ground usually yellow cornmeal, however in Venice Italy, white coarsely ground cornmeal is the most popular.
Growing up in the 1960s with an all Italian grandmother (who was born in Rome Italy) she was very accustomed to depression food and made this often when I was a child.
Mom would make a Traditional Sunday Sauce and grandma would use the leftover meatballs and sausage crushed up and poured it over our polenta dish.
That wasn't how she first had hers as a child and it was served just made in boiling water and the cornmeal was served with butter or olive oil if they were lucky to have it.
Later on, sometime around 1910 (when she moved to the USA at 16, to Utica New York which is referred to as Little Italy), she adapted the recipe that would become one of our favorite dinners in the winter months.
Cornmeal is still a very popular grain used in cornbread recipes, and many restaurants use polenta as an appetizer.
We love Polenta Pizzettes, Polenta Lemon Biscotti Cookies, and even used as a coating on potatoes!

If you love Italian Stuffed Peppers then this style deconstructed version Stuffed Pepper Soup will be your new easiest way to get big bold flavors without all the fuss.
Mom made an Italian similar verson with the addition of hard-boiled eggs to the mixture, and it was a hearty bowl of yumminess.
I still serve ours with boiled egg but just on the side as a garnish, it's still my favorite way to eat this soup.
We also loved them with a side of my Grandmother's famous Tuscan Garlic Bread or added some homemade crunchy croutons for garnishing this soup.
This soup is pure comfort and has the big bold taste of stuffed baked peppers just without in half the time it will take and super easy to fix.
Some like it spicy so by all means add some heat like freshly cracked black pepper and red pepper flakes to the pot!
The soup is bursting with that old fashioned stuffed pepper flavor and certainly, one of the most comforting soups I have ever made besides Grandma's Old Fashioned Chicken Soup, of course.
I will give you tips, suggestions, and a great way to make a deliciously satisfying meal that taste exactly like the stuffing in the pepper you love just without the bread crumbs, that's what the garlic bread is for.
