Chocolate Coconut Cream Whoopie Pie

Monday, June 4, 2012
If you love vintage cookies, these whoopie pies will bring you back to simple times but the recipe is made easier starting with a cake mix and the filling is so easy for a quick nostalgic blast from the past.

These chocolate cookies are filled with coconut marshmallow cream inside, and of course adaptable to a chocolate cream non coconut filling just by omitting the coconut.

During the last few years, we've even used other cake mix flavors and adapted our whoopie pies using spice cake, white cake, and lemon whoopie pies, so this recipe is very versatile.

Try adding different extracts to the filling to coordinate the kind of cake mix you're using when making the cake mix whoopie pies

Bangers and Mash Hand Pies

Friday, April 29, 2011
One of the most beautiful Royal couples will marry today.

I became interested in the Royal Wedding pre-martial interviews when Prince William was interviewed.

He touched my heart with his words about his mom, Princess Diana.

He talked about the great love he will always hold for her and how he thinks about his mother Princess Diana every day in her teachings, as much was taught to him by her in his role of who he became as an adult and stood Prince.

Today he still carries those values with him and isn't a day that goes by he doesn't think of her.

Kate Middleton, his Princess bride-to-be, said she wanted to model after her in this new life she will begin and take after his mom's memory and role model.

Such a tearful moment in time to think his mom was only 36 years old at her untimely death.

Fresh Red Raspberry Pie

Friday, April 17, 2020
Mom made the best Fresh Red Raspberry pies growing up.

Using simple pantry ingredients all from scratch these sweet red berries were my dad and I favorite pie.

I love to pick the first fresh fruit in peak berry season.

We had several berry bushes in our yard that Dad grew.

Sometimes we would combine boysenberry, blackberry, and red raspberry when all of them were ripe at the same time.

This pie continued from childhood to adulthood as being my favorite flavor and now a family favorite.

The red raspberry pie will always bring me warm wonderful memories of Dad and me enjoying a big slice with a big tall glass of cold milk.

Now with new technology, I even love Air Fried Hand pies and make them often using fresh fruits.

We love all kinds of seasonal pies like a fall Apple pie, summer-fresh Pineapple pie and then during the holiday we always make a freshly baked pumpkin pie.

The crust and filling are simple to make and all homemade check out this printable recipe by scrolling all the way to the bottom if you want to skip reading tips and tricks.

Homemade Fresh Pumpkin Pie

Wednesday, November 28, 2018
Homemade fresh pumpkin pies are special, very special.

It's not every day I like to spend my entire day preparing for a holiday, but when it's a holiday, it must be done right, at least in our family.

Pumpkin pie is always made from fresh sugar pie pumpkins.

Every year we anticipate the arrival of those fresh little sugar pie pumpkins and can't wait to dive into the best tasting fresh pumpkin pie using those and mom's pie crust.

Sure it's a little work but the end results are fabulous in comparison to store-bought bar none!

It's really not that difficult, getting the pumpkin cooked is the first order of business and I do mine in a slow cooker overnight in water.

Another family favorite during Thanksgiving week we also make a delicious Classic Pumpkin Roll filled with cream cheese for dessert, it's a must on our holiday table.

If you really love pumpkin desserts, also try our no-bake Easy Pumpkin Fluff Pie along with our delicious Pumpkin Frappuccino.

Baked Blueberry Empanadas

Monday, September 4, 2023
This is more of an idea than a recipe because there isn't much work making baked blueberry empanadas and they are perfect for a quick sweet treat or after-school snack!

Empanada dough is so versatile, the fillings are infinite when it comes to ideas for filling these mini hand pies with whatever you have either leftover from a previous dinner, fruits in the fridge, or even canned goods.

This is more of a guideline of ideas to give you on making something with sometimes just two ingredients involved, empanada dough, any kind of filling, bake, and viola, you have anything from savory to sweet.

The first time I made an empanada wasn't the traditional kind, we love Cuban sandwiches, so I dabbled in making an empanada using leftover pork tenderloin. You can find that recipe here also for Cuban Empanadas, which were also a huge hit.

Although traditional empanadas (pastelillos) are filled with chicken, beef, or pork, these little hand pies are so delicious it's the perfect addition to your collection of recipes for lovers of that little meat pie.

Whether you're looking for a quick little hot pocket meal or a simple dessert, these ideas below will "double down on your luck you have a winner" as the old saying goes.

Don't miss scrolling down the list of idea suggestions and if you would like a copy of those ideas and how to make them the printable recipe card is at the bottom of this post, hit print to avoid ads.

Classic Chocolate Cream Pie

Friday, March 6, 2020
This classic-style chocolate cream pie is made a few different ways back in the 1960s.

The pies were either topped with toasted meringue or freshly whipped cream.

The crust was either made with graham crackers baked or regular pie crust and now I even use several different kinds of our favorite crushed cookie crumbs.

Any way you prefer your pie toppings, with cream or toasted meringue, this homemade chocolate pudding is divine, and using mom's Lemon Meringue Pie (another classic favorite) recipe for the meringue becomes perfection.

These pie styles are both vintage recipes and certainly, classics that bring back fond memories of my childhood!

We love all kinds of cream piesmason jar pies and make several kinds of flavors around the holiday, apple, fresh pineapple pie, and pumpkin are more favorites!

Back in the 1960s, we looked forward to when mom made this pie from scratch, it sure was beyond special.

Sure this may be a little time-consuming but this easy-to-follow recipe is the best ever and the pie is totally worth every minute it takes.

Just choose the crust and topping styles you like, and you're off to a good old-fashioned chocolate cream or chocolate meringue fabulous pie.

The recipe is over 100 years all from scratch and I will warn you, it's sinfully addicting.

There is nothing like homemade banana pudding and the pie takes a little time and work but is well worth it.

Mom only made it for special occasions and this was a favorite as a child and still is into adulthood.

With my tips and suggestions, you will be serving the best-tasting banana cream pie you have ever eaten.

Two of my other favorite pies to try are Strawberry Cream Pie and Coconut Cream pie, both dreamy creamy confections and perfect desserts!

Grandma's Strawberry Rhubarb Pie Recipe

Friday, June 3, 2016
Homemade strawberry rhubarb pie is the best and this is one of the easiest recipes with sweet strawberries paired with tart rhubarb and a hint of orange zest, baked in a lattice pastry crust.

Using some quick-cooking tapioca makes the best thickness in our pie recipe and that's a vintage old secret mom had for making the perfect filling.

We also have tried many other combinations of fruits that actually were a nice change and you can read those suggestions below if you're not a strawberry fan.

I seriously wasn't a fan of rhubarb any other way growing up, now this old-fashioned pie is a family favorite we grew up on because dad had a garden and grew both of these.

Of course, if you're not a fan of blueberry, we've also tried Bing cherries, raspberries, and even some mango as an addition you can check below for some other suggestions.

If you're in a hurry of course and don't want to make homemade everything from scratch you can use a store-bought pie crust you will need a top and bottom crust.

If you're a pie fan you may also like to try our No-Bake Pineapple Fluff Pie or scroll through our Pie Roundup of Recipes.

This recipe is easier than a regular pie especially if you just make a criss-cross lattice crust on top, or just top the pie with the second crust and poke holes on top.

Impossible French Fruit Pie

Sunday, October 20, 2013
If you're not especially fond of baking this easy all-in-one pan fruit pie makes it's own crust using a baking mix and fresh fruits called Impossible French Pie.

The recipe uses fresh fruit, baking mix, and easy pantry ingredients and has a streusel topping much like a Dutch Apple Pie with cinnamon spice flavors.
I remember mom always having the box of baking mix out and knew immediately we were getting a fresh fruit pie from our apple tree.

The combination of fruit pie is endless and if you're a rhubarb lover don't hesitate to try this with that summer delight!

We also had a blueberry bush, a boysenberry bush, and a peach tree, so we dabbled in many combinations with apples and berries mixed together and had a different pie every time she baked it.

This is a recipe adapted from the Bisquick baking mix, although you can use any generic brand, we added to that basic recipe and came up with our own version.

If you're not much of a fruit pie lover, we also include an "Impossible Pumpkin Pie" recipe all in one pie plate and that crazy crust bakes right in that one also plus we also make Savory Impossible Pies you may like to try!
