Italian Cannoli is one of our favorite pastries ever invented and of course, everyone will tell you they make the best, just like I will tell you now, this is my mom's recipe and she made the best!
The creamy filling of mascarpone and ricotta is just an addictive confection that you just want to grab a spoon and keep eating.
Although you can buy premade cannoli shells, we always made our own, and my step-by-step instructions will certainly put to rest any doubts in your mind that there is anything hard about them; easy, but you have to have the right tools.
This tubular fried crust, then filled with this smooth, rich, delectable cheese filling inside, is incredible.
The cylinder tubes can be found online, and you can get them at a specialty shop for baking also.
The cylinders are a must-have to make these, some folks do a pizzelle maker but if I am going to only make these once a year on Easter, they're going into hot oil like the original way mom made them.
We love cannoli and I make a fabulous Cannoli Pie Cannoli Mousse, Cannoli Ice Cream, Cannoli Tarts, and of course a fabulous modern-day Cannoli Dip.
I'm not going to lie, this is a bit time-consuming but every Easter it's a tradition to make these pastries and there is no way I would want to disappoint my family, so beware, you will be starting your own tradition with these they're so delicious.

This is an easy Easter bread we make just about every year, it is a foolproof recipe that comes delicious every time.
The reason I call this easy, it really doesn't require much kneading, just add to the mixer until the dough is fully mixed and let it rise or refrigerate it until ready to use.
We love this bread toasted or just drizzled with powdered sugar icing and sprinkles, nothing complicated at all about this recipe.
I love simple bread recipes like this one they're so much easier then having to knead it for a long period it just has to be mixed well and preferably with an industrial mixer.
We also love no-knead french bread or pizza dough that I make often, and now it's so super simple even the kids can make it.
This bread is traditionally made with anise extract which our Italian family loves in flavor, however, you can use lemon, orange, or even just vanilla if you desire.

If you've ever eaten at a 5-star Italian restaurant then you'll remember those crunchy, garlicky herb-coated or plain breadsticks that are addicting so today we are making these divine easy breadsticks at home to prove that baking yeast dough from scratch is so much better.
The crunchy outside and pillowy soft inside make these irresistible not to mention our recipe for an addicting and "Ridiculously Delicious Dipping Oil " (see recipe below).

Fra diavolo (which in Italian is referred to as "brother devil") is a spicy tomato sauce for pasta or seafood, made with crushed red pepper, garlic, and fresh herbs like parsley and basil.
The spicy shrimp is a wonderful heat for those who love Italian red pepper and compliments this dish perfectly seasoned to the heat.
This dish can be made with fresh tomatoes or canned, even jarred marinara sauce, today everything is made from scratch in the recipe the same as I grew up on in the 1970s and mom's recipe.
The recipe is simplified with a few adaptions with the shrimp be grilled on the barbecue or with the original recipe indoors in a cast-iron skillet.
All these instructions are below with both simple ways to make shrimp diavolo perfect for any pasta you choose to top them with.

Growing up this was a typical side dish for breakfast, lunch or dinner and the best ever Old Fashioned Italian Home Fries I ever had that Dad made.
Dad usually was in charge of making home fries because he really made the best.
The recipe can be different every time you make these home fries with some additions added depending on what time of day it is for using spices we love them plain for breakfast, spicy for dinner.
Just by adding a few simple ingredients, Dad somehow turned an ordinary potato into an addicting crunchy wonderful spud and usually made our own homemade seasoning salt we kept on hand.

If you've never heard of Colcannon Potatoes with Guinness Gravy, this is the easiest recipe on how to make them in your own kitchens!
There are a few theories where these delicious spuds began making their appearance.

Baked Crack Chicken Breasts also has another familiar name (that's popular all over the net)named Ranch Bacon Chicken Breasts and you may be asking why it's called crack chicken.
This chicken dish is a super creamy ranch in flavor topped with crispy bacon and totally smothered with lots of melted cheese.
The chicken is moist bursting with fabulous flavors, its melt in your mouth tender, quite addicting, hence where that name came from being called "Crack Chicken" and we can see why.
Recently I also switched off and even tried this recipe with blue cheese, bacon, and cheddar since that's how I love my chicken, and actually this way was a huge hit also.

Here are two recipes for Pasta Primavera, the original 1975 version with a cream sauce and the other with an Italian tomato sauce which is photographed here in this post.
In Italian, primavera means "Spring", a fresh-tasting pasta that can keep that time of year every time you make it, anytime.
Back in 1975, Sirio Maccioni wanted to come up with new recipes with his two top chefs for his restaurant establishments and that's where it is said Pasta Primavera was invented.
His recipes would include a combination of beans or peas, with asparagus and the cream sauce over a medium-sized noodle like tagliatelle.
The recipe he made was said to be mixed with butter, cream, and cheese with vegetables and pasta so either one you like is below in the recipe card.
Through the years, it has been adapted in many ways, today's style is with tomato sauce in the photos, we also have tried pasta with these two sauces Scampi or Alfredo sauce recipe both delicious.
Another alternative would be to add meat or several other kinds of vegetables for those who want a hearty meal.

This bolognese sauce also referred to as "Italian Ragu" dates all the way back to the 18th with French cooks making a stew but the earliest documented was from a chef in Bologna called Alberto Alivisi and was served with pasta.

This dessert has so many names we call it Pistachio Ambrosia, it's also referred to as Watergate salad, Pistachio Delight or Shut the Gate salad, Green Goop, Ambrosia Fluff, Green Goddess salad, Green Fluff, or Green Stuff.
There are also several written stories about this salad and it's origin and over the years has been debunked.
Regardlesswhere the recipe was started it's a delicious dessert or side dish made with instant pudding, canned fruit and whipped topping.
I love taking this to picnics and pot lucks and many times have just used vanilla instant pudding instead of pistachio for those who may have nut allergies and tinted it green or the theme of the party.
