I have used round roast made Italian style, chuck, and London broil, and they all taste great.

I love to mix and match fruits for this great baked french toast. We used leftover rolls this year the sweet ones. They made the perfect baked french toast and the fruits with added cinnamon smelled awesome baking. This is one I make every Christmas for the family morning breakfast using Panettone along with a baked stratta with any leftover breads.

There is something about Cinnamon Butter drop cookies that I love. Well, not something, everything.

Since I was a child around 11 years old, I had my first cookbook from Better Homes and Gardens.

Red, white checkerboard hard copy fro the 1960s.

The pages are used a lot and worn now and did I ever get my use of it.

I made just about everything in that book.

This is an adapted recipe from there.

They used shortening instead of butter in their recipe, butter makes them more cake-like and lighter.

I find that shortening came out more like shortbread and biscuit tasting.

I really love this recipe and it's so easy. Drop the dough on the cookie sheet and bake, cool then dust with powdered sugar!

The best sugar cookies are like a shortbread cookie to me. Buttery, crisp and of course are homemade. I love the ease of these cookies as they come together perfectly every time and everyone asks for them throughout the year not just a Holiday cookie. The flavors all meld together perfectly.

Best Pecan Sugar Cookie Slice and Bake Cookies

3/4 cup butter  softened 
1 cup sugar
3 1/2 cups flour
1 1/2 cups chopped pecans
2 tablespoons milk 
1 teaspoon vanilla
1/2 teaspoon almond extract
pinch of salt
Optional: Course sugar to roll edges

In a large mixing bowl using a flat beater, beat the sugar and butter together until light around 3 minutes. Add the vanilla and almond extract and combine will blended.
Slowly add the flour, pecans and milk until it just forms a ball starting out with just 2 tablespoons milk. Add the other if needed depending on altitudes you may need a few teaspoons more. Dough should just form together.

Place the dough on wax paper to form a long log and refrigerate for at least 30 minutes.
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.

Slice cookies around 1/2 inch thick or you can roll them and cut them with a fluted edge cookie cutter if you like then place on parchment paper. You can even roll the edges in course sugar if you like. Bake at 350 for around 20 minutes or until edges are lightly brown.
Cool completely before serving.

This is an ingredient I use a lot to make flan, cookies and candy. It's pretty pricey too!
I use it often so and just make it myself.

Homemade Sweetened Condensed Milk Recipe

1 cup boiling water
2 cups sugar
2 cups nonfat dry milk powder
6 tablespoons real butter (not margarine) softened

Mix all ingredients in a food processor or blender for at least 1 minute then refrigerate overnight.  Use in any recipes that this milk is used in. Use  within 3 weeks.

Homemade Shrimp and Crab Rangoon Recipe

Whether you make Egg Rolls, Filled Desserts or Appetizers with his wonton dough, it's a versatile dough that will do it all! Check out the easy ingredients for the dough then let your imagination of fillings run wild! Enjoy!

Homemade Wonton Wrappers

1 1/2 cups flour

1 teaspoon salt

1 egg

2 tablespoons water

Place flour into a large bowl. In a separate bowl, whisk together egg, salt, and water. Create a well in the center of the flour and pour in the wet ingredients. Mix everything together with the paddle from an industrial electric mixer, until the mixture begins to come together.

Knead for 3-5 minutes.

Cover the dough with a damp towel and let rest for 1 hour. Divide the dough in half.

Cover one half of the dough with your towel.

Add some cornstarch on a cutting board (or whatever you use to roll the dough out on) to roll out your dough on.

Roll half of the dough as thin as you can, forming a rectangle roughly 20”x10”.

Cut the sheet into your desired shapes. Usually, store-bought is 5 to 7-inch squares and are perfect for egg rolls.

I use 3-inch squares or circles for wontons or dumplings and desserts.

Repeat with the remaining dough. Use the wonton wrappers immediately or freeze.

Shrimp and Crab Rangoon Recipe

15 wonton wrappers

9 peeled and deveined shrimp chopped (boiled or precooked)

1/4 cup chopped crab meat fresh or canned ( you can use the crab sticks I prefer not to since they get soggy)

4 ounces cream cheese room temperature

1 teaspoon granulated garlic

salt, pepper to taste

pinch of cayenne pepper


egg whites or milk

melted butter if baking

Mix all together in a bowl. Using a wrapper, place a good amount (1 heaping teaspoon ) in the center of the wonton. Fold all four ends to the top joining together and sealing the edges like a flower with egg whites or milk. You can also just make triangles the same way.

Either deep fry in hot oil or bake on parchment paper on 400-degree oven. Note: if baking brush with butter first.

Brown Sugar Recipe and Tip

With all the holiday baking coming up, I thought you may enjoy this little tip. You many remember the many baking tips from last year  (if not click here for baking tips)
I don't know how many times I've started a recipe and run out of brown sugar.

Keep a bottle of molasses on hand and sugar and you will never have to run to the store again!

Light Brown Sugar 
2 tablespoons of molasses
1 cup sugar
Place in a zip lock bag and shake until evenly mixed store in the same bag!

Dark Brown Sugar
3 tablespoons molasses
1 cup sugar
Place in a zip lock bag and shake until evenly mixed store in the same bag!


Now for a tip trick! If the mixture of either one should ever get hard, place 1 or 2 slices of regular bread in the bag overnight. In the morning it will be soft and pourable again! Works like a charm!

Chicken Wing Stew

Grandma made this Chicken Wing Stew all winter long at least once a month.

During the depression years, this was considered very economical to feed a large family.

Everything was made with fresh garden vegetables and fresh caught or bought chickens!

Even the tomato paste was homemade!

Chicken wings were very inexpensive and when Grandma was a child from Rome Italy, she told us stories about how they bought live chickens and cut the meat themselves in the old country.

She even explained to me how they burned the feathers off first.

Grandma sure made us all realize how lucky we were to have food on the table and we were very thankful every day.

Later on, when she moved to America, she was pretty shocked we didn't have live chickens on every street corner like Italy had.

It was an easier transition for cooking and everything she made was easy and bursting with flavor.

I just wished she was still here to read that over 100 years later her family is still cooking the way she taught us.

Everything was and still is a labor of love when making any Italian dish, especially as authentic as this old recipe.

The smell alone of this cooking will get those juices watering in your mouth to eat this delicious stew.

This isn't depression food anymore, it's a banquet we all love and her stew is all about what Italian food should be Roman style.

I am considered the wing Queen and make all kinds of wings long since grandma passed on at 94 years old, but this is still one of my all-time favorite recipes.

If you want a great Halloween Meatloaf using a meatball mixture, this is it! It's fun, delicious and pumpkin looking, not scary! The kids will love it!

Fingerling carrots you will need two one for the stem and half for the nose
Pitted  black olive slices any kind
1 Bell pepper cut into the mouth and outer ridges of the meatball

Mix the meatball mixture. Shape into a pie plate to mound into a large ball. Add the sauce to the top of the meatball mixture. Add the stem, cut out the teeth from the pepper ring. Use some for the eyes.

Bake at 350 until the meatball is cook all the way through around an hour or more.

Stovetop or Slow Cooker Beer Stew Recipe

Most of the stews I make have wine. This one I used beer and the meat just melted apart. Great tenderizer and the taste was awesome. I was pleasantly surprised on this drunken stew. Get the best crusty bread ready to dip this amazing sauce in!

all in one pan beer stew with beans, meat, potatoes in a rich tomato sauce

Beer Stew Recipe

3 pounds boneless pork, beef or chicken or venison stew meat
4 cubed potatoes
3 medium zucchini cut in cubes
2 teaspoons granulated garlic powder
salt pepper to taste
Optional: cayenne pepper for heat
2 plum tomatoes cubed or use a small can of diced tomatoes
1 cup peas
1 cup sliced or finger carrots
1 stalk celery
1 pound mushrooms
1 pound green beans cut
2 sliced bell peppers
1 teaspoon each Italian seasoning
1 - 28 ounce can crushed tomatoes 
1 - 12-ounce cans beer ( I prefer Guinness Beer)
water if needed if too thick

Saute the meat in 2 tablespoons of oil if using the stovetop method.
Brown and add everything to the pot and simmer on low for 2 hours to 3 hours or until meat falls apart.

2 tablespoons cornstarch mixed into a thin paste with water for thickening at the end ( this is for the slow cooker version)

You can use any other vegetables you like in this stew anything goes in the pot!

For the Slow Cooker Method:

Dump everything into a 5 quart or larger slow cooker.
( See note below). 

NOTE: If using a slow cooker place on high for 4 to 6 hours or low 6 to 8 hours. I also add the cornstarch to thicken it the last 30 minutes of cooking for a thicker stew.


Pumpkin Cream Dessert Recipe

This is the perfect dessert for a crowd. Either using a big trifle bowl or making individual dessert cups, this dessert will feed the whole gang! Creamy cheesecake filling and one the of easiest and festive desserts you will make for the season


Spice cake mix (1 package 18.25 ounce size of any brand) you can use other flavors also if you like

1 small package instant vanilla pudding
1 cup pumpkin puree
1/2 cup oil
1/2 cup water
3 eggs
1 teaspoon pumpkin pie spice or cinnamon

Mix all in a mixing bowl. Pour into a greased 13x9 sheet cake pan. Bake on 350 degree preheated oven to package instructions. Completely cool. Cut cake into 1 inch cubes.


1 container whipped topping to equal 2 cups or whipping cream whipped

2 packages  instant pudding cheesecake flavored (instant pudding mix)
2 cup cold milk
2 tablespoons whipped cream cheese
Beat together the pudding, cream cheese and milk till set, then fold in the whipped cream. Set aside.


1 cup crushed cinnamon graham crackers

Optional: 1/2 cup chopped pecans and 1/2 cup crushed toffee bits

Using either a huge glass trifle bowl or individual dessert cups, layer cake, pudding, cake then ending with a garnish of crushed graham crackers, pecans and toffee bits on top.

Hurricane Tips and Preparation

Amazing what can be in store when a storm is coming your way.

Being prepared is key. If you are in an area that has tropical storms, this post will give you some of the important tips to follow.

From the time we moved here in 1994 until the present time, we have been through several hurricanes and seen many tornadoes, tropical storms and experienced in preparing.

Irma pounded us for more than 15 hours on 9/12/2017. Frances for 36 hours in 2004.

We experienced 20 tornado activity in Brevard county. Lots of floods, mobile homes ripped to sheds. Fish thrown from the rivers and alligators walking across the street in downtown Melbourne.

We just got our power back on and very grateful for minimal damages. God Bless Florida and pray for all with the devastation throughout the entire state.

Prepare by adding frozen plastic water bottles and containers, condensing food in our freezer to keep cold cuts, cheeses safe during the almost always counted on outages is a must.

Take them off the warmest part of the refrigerator door and freezers, add them to grocery bags and stick everything in the freezer that can spoil.

Some outages have lasted more than 12 hours and others for days.

If you are lucky to have a generator, remember to get this ready with new oil and sparks plugs before the storm hits!

I also had bread dough made ahead of time to use outside on the grill to make pizza in cast iron skillet, fried dough and the old fashioned coffee pot didn't fail me.

Perfect must-haves with no power. This was the first time we had plenty of days to prepare using the tips below.

We are all big fans of meteorologist Jim Cantore and follow him step by step.

When we see him show up in Florida, that's a telltale sure sign we are on total alert for a bad hurricane coming and we certainly do not ignore any of the advice given and take nothing lightly.

He always shows up and chases the biggest badest storms out there, we all admire his dedication and appreciate his knowledge to keep us up to date on these storms.

Anyone reading this I pray to keep us all safe and out of harm's way.

I love Blueberry Almond Scones , I have made all kinds that make me smile. These were another one of those combinations I had to try. Sometimes I think the most simplest recipes are the best. Grandma always made her own pound cake. This recipe is made with her cake and the dessert is easy and old fashioned but the taste is sublime.

The presentation that this cake sliced can make will wow your family and friends. It sure is loved at all my functions we have. Actually my kids always ask for this one.

 Strawberry Easy Pound Cake Dessert

Even though I make this with strawberries, you can use any fruits you like. There are family and friends who may not like strawberries. 

So build your own with a buffet of fruits. I like to separate fruits and have my guests pick their favorites. You can use peaches, raspberries, blackberries, peaches sliced, bananas, apples, cherries and much more!

Have a bowl of heavy whipped cream on the side and this can be a shortcake party!

Another great things about these cakes is they freeze well. Make them in cupcake tins and if your in the mood for a treat just use one at a time.

Shortcake was found as far back as the 1500's in an English cookbook. The shortcake is typically made with flour, sugar, butter, eggs, cream and leavening agents.

Making the cake brought back many childhood memories of my grandmother. That old fashioned taste of her pound cake is etched in my mind.

The smell of vanilla while it's baking is one of the most mouth watering smells while cooking. I just love making her pound cake.

Should you be in a hurry the other alternative is to buy a ready made cake and this will be a semi homemade recipe.

Strawberry Easy Pound Cake Dessert Recipe

1 -  homemade or store bought pound cake cut into cubes

1 container of cleaned sliced strawberries
1 jar of strawberry jelly or jam warmed 20 seconds in the microwave just to melt it
1 container of whipped cream
Place cut up cubes of pound cake into a dessert dish or mason jar. Spoon the sliced strawberries on top of the cake. Brush with with jelly.

I always loved zucchini quiche but this Crustless Zucchini Quiche tastes absolutely amazing plus made in muffin tins recipe the perfect on the go breakfast!

Lucky for me I get zucchini fresh all year long in Florida but I also freeze it shredded you may have seen my tips on freezing zucchini?

When it's lower in price I just buy them up, shred or cube and freeze, it's so easy and then I have it all year long ready to use.

I am a big fan of crustless quiche and zucchini quiche, especially in summer when we want to eat lighter.

A very cheesy Alfredo recipe! Ricotta, Sour cream, Parmesan and Mozzarella! Not for anyone on a diet that's for sure but indulge in this wonderful comfort food once in a while won't hurt. It really is delicious!

You can make your own alfredo sauce, recipe included below

or use store-bought sauce in a hurry

Pasta Alfredo Casserole Recipe

1 pound of spiral macaroni cooked to package instructions drained
2 - 10-ounce jars store-bought of Alfredo sauce or use recipe below
8 ounces of sour cream
1- 8-ounce container of whole milk Ricotta
2 eggs beaten
1/4 cup blended parmesan and romano cheeses
1 1/2 cups shredded whole milk mozzarella
1 teaspoon granulated garlic, parsley, oregano 
salt, pepper to taste

In a greased 13x9 pan, add half the pasta and toss with alfredo, sour cream. Stir in the eggs, parmesan romano cheese, half the mozzarella, spices and Ricotta. Stir all together. Add the rest of the mozzarella on top. Bake at 350 until browned and bubbly.

Alfredo Sauce Homemade

2 cups heavy cream
1/2 cup butter 
1 cup parmesan cheese
salt, pepper, cayenne pepper, granulated garlic, Italian seasoning to taste
4 oz cream cheese

Place this all in a medium size saucepan bring to a boil. Use for this recipe or on your favorite pasta.


Bing Cherry Loaf

One of my favorite fruits of summer is Bing Cherries and this loaf is one of the best cake style quick bread I ever had.

It's actually hard for me to make this cake when I just about devour every cherry so I have to get my fill of sweet Bing Cherries before I can make this.

Of course, if you're not a fan of this fruit, you can mix in any kind you prefer.

This recipe is a basic butter style cake-like quick bread and is very versatile.

It has a hint of grated fresh orange peel or lemon that gives that sweetness just the right offset of flavors.

Sometimes I even cut the sugar back if they cherries are super sweet and ripe or other fruits like peaches so the cake isn't overly sweet.

You can adapt it any way you like but this is our number 1 favorite summer muffins along with Best Mango Muffins.

I have had many readers tell me how great this also is with the addition of milk chocolate in chunks or chips added.
