Ham Cabbage and Potato Soup

Thursday, January 30, 2020
This is an easy delicious Ham, Cabbage, and Potato Soup and was a staple growing up in the 1960s in our home.

This dish will feed a large family inexpensively and it's packed with health benefits.

Ham and any kind of meat you have on hand, really enhance the flavors of this broth and perfect for using up leftovers!

My mom made this often after a big holiday ham dinner using the bone and some meat off of it to make this soup,

I love comfort soups like this and you can add just about anything you like in the pot to make it even heartier so don't skimp on adding more vegetables your family likes.

I still make this in her memory but more often during the year, it's really a family favorite soup and so simple to make.

The soup can be made in an instant pot, slow cooker or stovetop.

A healthy rich soup that is perfect with a loaf of crusty bread of saltine crackers to sop up the delicious broth but fabulous just the way it is.

Mom made many kinds of soups all winter long and this was a family favorite along with Grandma's Chicken Soup, Lentil Soup, and Minestrone, and of course, a famous Italian Wedding Soup is always welcome on our table!

Homemade Cinnamon Rolls

Wednesday, January 29, 2020
These Homemade Cinnamon Rolls are the ultimate Cinnamon bun!

They are soft tender full of delicious buttery cinnamon filling and with a touch of cream cheese drizzled frosting over the top.

In my family's opinion (and mine), these are the best cinnamon rolls on the planet, but we will let you be the judge!

We use to go to the mall years ago and get a cinnabon bun which is a clone for sure!

Those were served warm and gooey and the kids loved them.

They were so excited to taste that long ago memory in this copycat recipe!

You can even choose another filling I also added to the recipe that we love, filled with orange marmalade in the rolls.

The perfect breakfast or any time comfort food.

We just love the smell, it's hard to wait until they are cooled off to eat them and we always end up burning the roof of our mouth because we just can't wait!

These are great with any hot beverage like coffee, tea or hot cocoa.

You may remember my yeast-risen recipes like my Almond Filled Coffee Cake Recipe or my Amaretto Pannetone, two more of my delicious homemade breakfast treats.

Old Fashioned Corn Fritters

Tuesday, January 28, 2020
Here is the easiest recipe for some little old-fashioned corn fritters.

These little fried balls of fritter cakes are very much like donuts, however, they are chock full of fresh farm-fresh corn, cut right off the cob.

A tender little treat that melts in your mouth and is eaten while still a little warm with a light coating of powdered sugar so addicting.

I can't tell you how fast these fly off the plate we end up making two batches and they're gone in a New York minute.

I use a brown paper bag to shake them into coat evenly and they're just the right sweetness.

If you've never tried this Southern little corn fritter donut hole as a kid you're going to need to whip up a batch.

I love any kind fried desserts especially like Mom's Italian Fried Zeppole for dessert.

There's nothing like a little fritter in your life to go along with some Cowboy Beans and Barbecued Bourbon Pork Chops of Fried Fish!

Homemade Lemon Curd

Most of us love lemon here. However, we still have chocolate lovers too! So, you can fill them with whatever you like!

Eggplant Recipe Roundup

Wednesday, January 8, 2020
Eggplant is a popular plant and is considered a fruit that is a delicious addition to any recipes or eaten alone as an appetizer.

The fruit considered eggplant takes on the flavors it's cooked in easily and used in so many recipes served in many cuisines all over the world.

Here is a complete roundup of all my favorite recipes I have made over the years using this versatile delicious fruit.

This roundup includes eggplant with pasta, chicken stacked with eggplant, on pizza and even as a hummus dip, just to name a few ways to prepare it.

Eggplant can be a fantastic substitute for meat in many vegetarian meals for those who refrain from eating meat.

The characteristics of this fruit have many edible tiny seeds in it and the skin is also edible so it doesn't have to be peeled, however, I do peel it on occasion.

Cooking can be done by grilling, steaming, stir-frying, pan-fried, deep-fried, roasted, stewed curried and pickled.

It can even be mashed to make dips or stuffed with rice and meats.

Eggplant can have a bitter taste and has a very sponge-like consistency but will be tender when cooked and absorbs the flavors it's cooked in easily.

One of the tips to get the bitterness out is salting the sliced fruit before cooking may remove the bitterness, that method has always worked for me.

Below you will find several ways to prepare it and strolling through my gallery of our favorites, I hope you find one you love, we love them all.

Old Fashion Venison Stew

Sunday, January 5, 2020
Growing up in Upstate New York, we had several hunters in the family and friends who gave us deer meat to make this old fashioned venison stew.

Mom back in the 1960s worked long hours but always seems to create a delicious easy version like this stew recipe and made the meat super tender.

She did this on top of the stove back then, later in years I only used a slow cooker, you can do this either way.

Slow and low, that's the main trick.

The flavors in this stew are bold with beefy flavor and will fool anyone that it isn't regular beef.

Venison can be gamey tasting, but this one isn't at all.

Check out the ingredients, she fried it a little first, then used the canned soup and flavored this stew up nicely.

Marinated Burgundy Prime Rib

Wednesday, January 1, 2020
The prime rib is perfect for the holiday season for a very good reason and this Marinated Burgundy Prime Rib roast is superb in flavor!

It is the king of beef cuts period.

This is a vintage recipe for the 1960s and how my mom made it.

After all these years, it still a family favorite recipe.

My husband requested this for his birthday since it's on New Year's Eve!

It’s called a standing rib roast because to cook it, you position the roast majestically on its rib bones in the roasting pan.

Beautifully marbled with fat, this roast is rich, juicy, and with this marinade a melt in your mouth tender roast.

It’s also very easy to cook.

Starting the roast in the oven at a high temperature of 450 degrees to get a good sear on the outside of the roast and then you finish cooking it on a lower temperature of 325 degrees.
