Homemade Pita bread is so easy on a cast iron gridded skillet with that rustic old fashion flavor!

Starting with homemade dough, these pita bread can be either baked or made on the stovetop, either one is will smell heavenly and the in taste will be nothing like any store-bought brand.

I love using pita bread for sandwiches, pizza, cut into triangles for dips, and so much more!

Amazingly enough, this is an easy dough, baked on high heat, puffs up quick and flattens, and again either baked or in a cast-iron skillet it's delicious!

We love it stuffed and filled with salad greens and cold cut meats then drizzled with olive oil and vinegar.

Many times we even make a greek version with the popular greek salad dressing and feta cheese on top.

You can serve pita bread with any meal and it goes great with chili, stews, and soups as well!

Stallone's Rocky Oatmeal Cookies

Stallone's Rocky Oatmeal Cookies are just one of the many foods Slyvester Stallone ate while filming Rocky 3.

He wrote about his diet and what it consisted of back then in 1982 and this recipe was inspired by that.

While filming this movie, his meals consisted of just a few oatmeal cookies made with brown rice flour, and he also drank up to 25 cups of coffee a day with honey and a couple of scoops of tuna fish.

He really worked hard to get that buff body, and although it was extremely dangerous to his health and he admitted it, he wrote he never regretted going to such extremes.

I wanted to share this recipe I adapted that was published originally from Sylvester Stallone’s awesome book "Sly Moves", which was written in 2005 for those getting fit out there and still available for purchase.

The only difference in mine is I add soaked plump raisins in these cookies, and sometimes cranberries or nuts.

For all my Rocky Balboa fans out there, this one for you.

Through the years I have made many kinds of Oatmeal Cookies, and even a Banana Chocolate Chip Oatmeal Cookie.

Having a son who works out and a huge fan of Stallone movies, these are a favorite healthy version.

This recipe base was originally from my grandmother's muffin recipe for fruit added to her homemade recipe.

We never had mango where I lived in New York or even heard of it until I moved to Florida.

The mango worked perfectly with her recipe for muffins!

Now having a mango tree, we get to enjoy these mango muffins often.

They are so easy to make and perfect every time!

This Flounder recipe is one of my favorite light tasting fish and I love this fresh saltwater seafood for many recipes.

Mom always made Flounder Francese with an egg coating batter which is still an all-time favorite.

This recipe is also great substituting Chicken, Steak, and Pork if you're not a seafood lover.

My recipe is a baked parmesan coated cracker crumb recipe that is so easy to make and cooks quickly because this fish is so thin.

Flounder is a flat not very appealing looking fish, but it sure is tasty with the right seasoning.

The cheese blended with garlic and herbs is the perfect crunchy topping for flounder.

Since it's so thin flounder is best baked or with a floured batter coating so it doesn't fall apart.

Of course, if you can find this light white seafood, you can always substitute another kind that I will suggest.

I have been experimenting for years with brownie mixes and made several kinds of stuffed mixes.


Starting with a mix is so versatile, but of course, you can use a homemade brownie recipe.


The favorites are my peanut butter graham brownies, oreo brownies, smore brownies and of course, I can't forget nutter butter stuffed brownie.


What can be easier than starting out with a mix and transforming it into a decadent over the top dessert?


With the added ingredients no one knew they were a mix anyway!

Stove Top Sirloin Steak Marsala

Stove Top Sirloin Steak Marsala is one of my favorite comfort foods and the easiest one-pan meal.

I use lesser-cut meat that is economical and it takes the place of veal in this classic Italian-style Marsala dish.

In addition, we add mushrooms to this wonderful beefy version of delicious dry marsala sauce since sweet marsala is usually used more in Italian desserts and keep both versions on hand.

Cooked to your personal preference from medium-rare to well done (that's your choice), slow cooking will still make it very tender meat using sirloin steak even well done.

When I was growing up, I would come home from school and the aroma was just mouth-watering when that door opened.

No matter what mom used for meat, the sauce was my favorite part and perfect to sop up a nice piece of Tuscan Garlic Bread.

Some of our favorites with Marsala in it are this Easy Chicken Marsala Sauce, Slow Cooker Rump Roast Marsala, Rice Marsala Almondine, and even these delicious desserts like this Cannoli Pie, have it in!

During the busy holiday season, easy recipe meals are a must.

There are so many days that I need quick, tasty comfort foods, like this one.

The recipe is super easy and perfect for on-the-go busy schedules.

Put everything on the stovetop, using a lesser cut of meat that will be fork-tender as it simmers in a delectable wine sauce, what more can I say other than YUM!!

Hot Dog Chili

I have been making this hot dog chili for years on the side at every outdoor cookout.

For those who love a great beanless chili dog, this is a mouth-watering delight and a copycat from my hometown Utica, New York.

We love this hearty topping, it's great on so many foods besides just hot dogs.

It makes a great topping for rice, pasta, and baked potatoes too!

This is sauteed with garlic and bell peppers that have been pureed in the food processor, the flavors are fabulous.

After you grill your hot dog, place it in the bun with this chili then heavily sprinkle it with sharp cheddar cheese and you have a ballpark home run for sure!

This is one of my all-time favorites when I serve my grilled hotdogs.

We love easy One Pan Recipes like our Merlot Chili and this Southwest Filling for Wraps which are two family favorites.

You can double the recipe and freeze some for another time to have it ready for the next cookout.

Easy Baked Zucchini Lasagna is a great summer casserole and there are several varieties of fillings you can use with all our recipe ideas.

This versatile summer vegetable can be transformed into an Italian, American, or even Mexican-style casserole just by layering some different ingredients.

Our family is a big fan of zucchini and growing up my dad always grew it in our yard, the memories of this dish are priceless.

During the summer we bake lots of Zucchini Bread, make Zucchini Roll-ups, and love Fried Zucchini which is dipped in fresh marinara sauce, it's out of this world!

Slow Cooker Asian Chicken with Rice and Broccoli recipe is a simple way to make a wonderful super easy dinner without a lot of fuss.

With rice and broccoli tossed in soy sauce prepared ahead of time, you will have this basic chicken with an Asian-flavored sauce slow cooker with just a few basic ingredients.

It's kind of mock stir fry in flavors but healthier since it has none of the oils used for frying.

We love this healthy version with a little sweet and spicy flavored sauce.

Being very busy, this is a welcome change to standing over a hot stove and the perfect summertime meal.

Using a slow cooker or instant pot certainly eliminates time spent in the kitchen.

The best part is you can set the slow cooker on low and come home to a delicious hot meal that tastes like you've been cooking all day long.

Cubano Pork Sandwich

Whether you have leftover pork shoulder or tenderloin, here is a pork Cubano style sandwich everyone will love.



I love them grilled like a panini and I do not have a panini maker, I use heavy pan one that has raised grill edges on it and both are cast iron skillets that work great!



I make this sandwich two ways, one on a bun and one on a whole loaf of sesame seeded Italian bread, so the sandwich is not an authentic Cuban because I don't use Cuban bread!!



Use whatever kind of bread you like, I am a huge fan of sesame seeds.



This Cubano is piled high with tender cooked pork (in either the original Authentic Mojo marinade or a beer marinade which we love both) (I will also provide that recipe I use), swiss cheese, mustard and we love our black forest ham.



We had this sandwich once down in Miami Florida and it was fantastic, so I tried to duplicate the flavors as best as I can, it was such a big hit now I always use leftover pork for these sandwiches.



If you love copycat sandwiches you may also like to try my Burger King Whaler or my Arby Beef and Cheddar and for my Central New York Readers, my Harpoon Eddies Italian Sausage Special, these are all spot-on delicious replicas.



This is an easy delicious way to repurpose pork and I bet anyone who takes one bite will say the same as my family, "you can make this sandwich again anytime you want we love it!".

Mom's Italian Beef Stew

Italian old fashioned beef stew is pure comfort food.

Even though mom made this almost every week during the winter months, I love it with all fresh vegetables in the summer when they are plentiful.

The fresh string beans, garden tomatoes with any meat you like can go into the stew.

We love to use a nice thick piece of London Broil and cut it into chunks it makes a very flavorful stew not to mention makes this cut of meat super fork tender.
