This scrumptious Blueberry Skillet Cake with Rum Sauce is a moist cake that mom would make all summer during the height of the fruit season and a favorite recipe using this delicious fresh fruit.

The blueberry cake dates back to a vintage time of the 1940s era and quite unique as it is baked in a cast-iron skillet and the flavors are fabulously melded together.

This is an easy and very hearty Italian Style Goulash made easy with fresh plum tomatoes, beans, pasta, and peppers.

The Traditional American Goulash has many other spices including paprika in it, no beans, and a classic dish using elbow macaroni.

Our Italian Style Goulash is seasoned with fennel and fresh herbs with lean ground beef.

It's a hearty stew-like soup perfect for a chilly evening we called stoup because it was filling and so chunky.

Mom and grandma knew how to stretch a meal on a budget and in our Italian family, this was one of our favorite meals.

Any kind of pasta you like but mom and grandma used either ditalini or small shells sometimes.

If you're a hurried baker like me but little mini apple scones are perfect any time of the day and easy to make!.

Scones with apples and cinnamon all with the big flavor and texture of scones but without the fuss of rolling and cutting.

Often the larger scones are too much for me and these are perfect with a good cup of tea or coffee.

Mom's lasagna was always a treat around the holiday, especially Easter or Christmas time.

She would make everything from scratch and it would take her a labor of love in hours.

Homemade ricotta cheese, the lasagna noodles cut by hand, sauce, meatballs, sausage all from scratch!

Of course now in busier times, we have all the necessary ingredients to make a lasagna in record times and it so much easier.

Back in Bari, Italy where mom came from, everything was made by hand special during a holiday.

You can use all store-bought ingredients and this lasagna will be a huge hit.

Mom made her lasagna with hard-boiled eggs in a layer, that was how her Region made it, you can skip that layer and just add more meat if you aren't a fan.

Easter Holiday desserts are a yearly tradition and several are must-makes in an Italian family, these are all of our favorite vintage and some new recipes.

Through the years we've adapted some for the kids to carry on these fun traditions to instill those same values but make it fun using peeps are other delicious easy ingredients.

Growing up mom and grandma always made Easter bread, cassata, and many kinds of cookies one especially that were soft wedding-style Italian cookies with colorful frostings.

One thing I learned over the years is variety is the spice of life and everyone is so different so we have learned to cut recipes in half and make almost everything you will see today.

Italian Cannoli Pastry

Italian Cannoli is one of our favorite pastries ever invented and of course, everyone will tell you they make the best, just like I will tell you now, this is my mom's recipe and she made the best!

The creamy filling of mascarpone and ricotta is just an addicting confection you just want to grab a spoon and keep eating.

Although you can buy premade cannoli shells, we always made our own and my step-by-step instructions will certainly take any doubts in your mind that there is anything hard about them, easy but you have to have the right tools.

This tubular fried crust then filled with this smooth rich delectable cheese filling inside is incredible.

The cylinder tubes can be found online, you can get them at a specialty shop for baking also.

The cylinders are a must-have to make these, some folks do a pizzelle maker but if I am going to only make these once a year on Easter, they're going into hot oil like the original way mom made them.

We love cannoli and I make a fabulous Cannoli Pie Cannoli Mousse, Cannoli Ice Cream, Cannoli Tarts, and of course a fabulous modern-day Cannoli Dip.

I'm not going to lie, this is a bit time-consuming but every Easter it's a tradition to make these pastries and there is no way I would want to disappoint my family, so beware, you will be starting your own tradition with these they're so delicious.

Easy Easter Egg Bread

This is an easy Easter bread we make just about every year, it is a foolproof recipe that comes delicious every time.

The reason I call this easy, it really doesn't require much kneading, just add to the mixer until the dough is fully mixed and let it rise or refrigerate it until ready to use.

We love this bread toasted or just drizzle with powdered sugar icing and sprinkles, nothing complicated at all about this recipe.

I love simple bread recipes like this one they're so much easier then having to knead it for a long period of time it just has to be mixed well and preferably with an industrial mixer.

We also love no-knead french bread or pizza dough that I make often, and now it's so super simple even the kids can make it.

This bread is traditionally made with anise extract and what our Italian family loves in flavor, however, you can use lemon, orange, or even just vanilla if you desire.

Homemade Italian Breadsticks

If you've ever eaten at a 5-star Italian restaurant then you'll remember those crunchy, garlicky herb coated or plain breadsticks that are addicting so today we are making these divine easy breadsticks at home to prove that baking yeast dough from scratch is so much better.

The crunchy outside and pillowy soft inside make these irresistible not to mention our recipe for an addicting and "Ridiculously Delicious Dipping Oil " (see recipe below).

These are perfect for any meal, plus they're a  great delicious addition to any entertaining around the holidays or even game-day get-togethers also.

I can easily make a whole meal out of these served with a little melted mozzarella cheese on top then dipped in our freshly made dipping sauce or marinara sauce on the side, bread is definitely my guilty pleasure.

Any time I make these, they're gone so fast I usually only get to eat one, so I will give you a fair warning to "make a double batch"!

Shrimp Fra Diavolo

Fra diavolo (which in Italian is referred to as "brother devil") is a spicy tomato sauce for pasta or seafood, made with crushed red pepper, garlic, and fresh herbs like parsley and basil.

The spicy shrimp is a wonderful heat for those who love Italian red pepper and compliments this dish perfectly seasoned to the heat.

This dish can be made with fresh tomatoes or canned, even jarred marinara sauce, today everything is made from scratch in the recipe the same as I grew up on in the 1970s and mom's recipe.

The recipe is simplified with a few adaptions with the shrimp be grilled on the barbecue or with the original recipe indoors in a cast-iron skillet.

All these instructions are below with both simple ways to make shrimp diavolo perfect for any pasta you choose to top them with.

Over the years I have also tried substituting homemade sunflower butter or you can use pumpkin seed butter for peanut butter allergies and it's so heartwarming to ensure everyone is safe and happy.

If you've never heard of Colcannon Potatoes with Guinness Gravy, this is the easiest recipe on how to make them in your own kitchens!

There are a few theories where these delicious spuds began making their appearance. 

Many historians have written these were invented somewhere in the 1700s in Ireland but unclear who first introduced these tasty chunky-style potatoes.

During the 1600 and 1700s throughout  Europe and Ireland, potatoes, cabbage, and leeks were considered peasant food, and easy to see where these ingredients would be used altogether.

Guinness beer has also been around since the 1700s, and there is very little documentation on where the gravy was introduced, but many diners served a beer-style gravy as the years evolved with many adaptions to this popular recipe.

Colcannon potatoes are super easy to make and if you celebrate St. Patrick's Day at any Irish pub, these are most often seen on the menu.

Baked Crack Chicken Breasts also has another familiar name (that's popular all over the net)named Ranch Bacon Chicken Breasts and you may be asking why it's called crack chicken.

This chicken dish is a super creamy ranch in flavor topped with crispy bacon and totally smothered with lots of melted cheese.

The chicken is moist bursting with fabulous flavors, its melt in your mouth tender, quite addicting, hence where that name came from being called "Crack Chicken" and we can see why.

Recently I also switched off and even tried this recipe with blue cheese, bacon, and cheddar since that's how I love my chicken, and actually this way was a huge hit also.

This recipe is so easy and perfect for a family dinner or even feeding a weekend get-together.

Pasta Primavera Two Ways

Here are two recipes for Pasta Primavera, the original 1975 version with a cream sauce and the other with an Italian tomato sauce which is photographed here in this post.

In Italian, primavera means "Spring", a fresh-tasting pasta that can keep that time of year every time you make it, anytime.

Back in 1975, Sirio Maccioni wanted to come up with new recipes with his two top chefs for his restaurant establishments and that's where it is said Pasta Primavera was invented.

His recipes would include a combination of beans or peas, with asparagus and the cream sauce over a medium-sized noodle like tagliatelle.

The recipe he made was said to be mixed with butter, cream, and cheese with vegetables and pasta so either one you like is below in the recipe card.

Through the years, it has been adapted in many ways, today's style is with tomato sauce in the photos, we also have tried pasta with these two sauces Scampi or Alfredo sauce recipe both delicious.

Another alternative would be to add meat or several other kinds of vegetables for those who want a hearty meal.

The herb slow-simmered tomato sauce compliments the vegetables and enhances their flavor.

Easy Bolognese Sauce

This bolognese sauce also referred to as "Italian Ragu" dates all the way back to the 18th with French cooks making a stew but the earliest documented was from a chef in Bologna called Alberto Alivisi and was served with pasta.

The tomato sauce is rich with meat and simmered slowly for a few hours and a topping for your favorite pasta dish.

Over the years it's been recreated several times and adapted to individual taste and added to baked lasagna, baked ziti, or other baked pasta recipes.

This sauce freezes well and can be used in so many other ways soups, stews, casseroles, and making large batches come in really handy in a pinch.

We have also many cooking methods for the busy cook, set it and forget in a slow cooker or instant pot.

These are going to be the easiest appetizer/orderve ever using tortilla wraps and making these mini rollup pinwheels!

I have fillings with Italian, Mexican, French ideas that will take care of every party member that loves something different, and they're made in minutes!

I use simple deli meats, shredded lettuce, favorite cheeses, and viola instant appetizer rolls sliced and perfect for any function, lunch, an appetizer for and any entertainment needs.

Of course, if you have creative ideas to use up leftovers, I would love to hear your ideas also, the possibilities are endless with fillings!

Pistachio Ambrosia

This dessert has so many names we call it Pistachio Ambrosia, it's also referred to as Watergate salad, Pistachio Delight or Shut the Gate salad, Green Goop, Green Goddess salad, Green Fluff, or Green Stuff.

There are also several stories of how this salad got its name from Kraft saying a food editor wrote about this but was never substantiated or found for sure.

Regardless the recipe was started somewhere in the midwest in the 1970s.

I love taking this to picnics and pot lucks and many times have just used vanilla instant pudding instead of pistachio for those who may have nut allergies and tinted it green or the theme of the party.

This popular whipped topping, fruit, and pudding dessert is always a big hit and of course, the kids go crazy over the mini marshmallows, (and the young at heart).

This basic recipe is great for baby /gender reveal parties since you can tint it to the color of plain vanilla pudding which makes a fun theme.

I make this more often in the summer months, I even tell the kids at a picnic it's a nonmelting delicious ice cream the little ones just love this but they don't like coconut so I leave it out.

Again a recipe is a guideline, change and adapt away, use fresh fruits, more marshmallows no nut more nuts, just get creative, it's the easiest dessert ever made in minutes.

Pork Lombardy is boneless delicious tender pork with a lightly floured coating, drenched in a light sauce, then smothered with lots of melted cheese.

Over the years we have switched back and forth from chicken to pork as they are both fabulous meats to use for this dish.

Sauteed mushrooms with garlic white wine sauce is the character of lombardies robust flavors.

Veal Milanese is a coated veal thin boneless scallopine style or can be made with a bone-in veal chop form coated and sauteed in butter..

The veal is seasoned in a flour and eggs batter coating then sauteed perfectly.

Of course, if you aren't fond of veal, you can use pork or chicken in its place to substitute and still get these delicious flavors.

This fork-tender veal is so tender and melts in your mouth in every bite.

ALthough can serve with a light side dish of sliced tomato Caprese Salad, we prefer a side of Pasta Aioli with Broccoli with our meal.

I loved the addition of red pepper flakes on top to give this dish a little heat also, not in the authentic recipe.

Let me start out by saying these Banana Mango Muffins are not only delicious they take you to a tropical wonderful place in every bite!

Just imagine yourself waking up in paradise, the fruit and taste of the Islands.

This is recreated by the taste of my favorite muffins we had during a cruise and our stop in St. Thomas.

The afternoon luncheon had a delicious jerk chicken, rustic-style potatoes, and these muffins for dessert.

It took me a few times to get the recipe perfect and now I am thrilled to write it down for you to try.

There's a hint of orange zest and cinnamon in this tender moist muffin and just the right sweetness.

Of course, they are all made from scratch with simple pantry ingredients just like my Island friends would do.

Baked Haddock and Scallops in Butter Dill Sauce taste like it came from a 5 star restaurant and super simple to make in your own homes!

The lemon butter dill sauce combination really complements any kind of fish you use, and the only sauce you'll want to use after one taste.

I just love making this for friends and family dinners it's really a show stopper with the colorful peppers and tomatoes added for a side dish.

The fish is moist and flaky and the buttery lemon sauce on top after it's cooked compliments this dish but can be used on any fish you like.

The addition of scallops on top with the toasted breadcrumbs are all baked to perfection just by sprinkling them on top, no fussy dipping or flipping the fish.

I love moist scratch cakes like this Florida Butter Pecan Orange Pound Cake.

Living here in Florida we have an abundance of orange trees and I am lucky to have a navel orange tree and always developing new recipes.

I took my grandmother's old-fashioned pound cake and transformed it just a tad bit to get this fabulous Florida orange pound cake, I think she'd approve of this one.

This fresh-tasting flavor cake will bring you right to a tropical place in your mind with the first bite.

That buttery citrus flavor with a little pecan crunch inside all just comes together deliciously and tastes great with or without being glazed.

This loaf isn't too sweet and has little bits of orange segments in it, you can't get any fresher tasting pound cake than this recipe.

This is one of my favorite recipes as a child called Mom's Salisbury Steak she would make in a pattie style or meatball in a skillet.

The recipe is quick, easy, and economical as it can be all made from scratch or you can adapt it by using store-bought ingredients just check out my tips and suggestions.

We love the homemade version, the meat mixture is basic pantry ingredients and the vintage easiest beef gravy recipe is super easy to make using beef broth and not complicated at all.

Of course for those who prefer not to use a wine you can just omit that and add a little more beef broth to thin the gravy no worries.

As a child, I thought the meatballs were a fun way to serve these and they were super delicious over roasted garlic mashed potatoes but salisbury steak is usually in pattie form so you can choose what shape you like.

A versatile basic recipe that can be adapted using any meats or seafood and Grandma and Mom developed this easy recipe.

This fork-tender chicken is so fork tender and great on a bed of pasta, mashed potatoes or rice.

Back in the 1960s living in Central Utica New York, mom usually served this over day old bread during those tough recession years, but you can choose any of our suggestions below for sides your family prefers.

The name of this dish came from Grandma because it was Grandpa John's favorite meal and Giovanni is John in Italian plus my brother's name who love this dish!

Baked Stuffed Zucchini is one of the tastiest one-pan meals you will ever make and so delicious.

These can be stuffed with so many variations and used as a wonderful edible food bowl.

Irish Potato Candy

First of all, let me just say, this candy doesn't have potatoes in it and you won't find this in any store in Ireland because it's not Irish even though it's called Irish Potato Candy.

This candy originated in Philadelphia where this confection is a favorite there and the candy sells over hundreds of pounds around the St. Patrick's Day holiday.

Inside this sweet treat is a delicious creamy coconut filling rolled in cinnamon.

Major candy chains started to make this in the area and are also popular in San Francisco made by the Sees candy factory.

The candies became so popular that now several local supermarkets by Oh Ryans in the Phillie area continue to sell the candy all year long.

This basic candy recipe is not cooked it does require refrigeration as he has butter and a cream cheese base.

I make two styles one rolled in cinnamon like the original recipe I split the recipe in half and roll them in an unsweetened cocoa powder which is my personal favorite.

The candy reminds me very much of an old-fashioned bonbon from the early 1960s.
