Baked Panettone French Toast

Sunday, December 26, 2021
Every year we get a gift of panettone and of course we also make it homemade from scratch like our Amaretto Panettone and Italian Panettone so we always have a ton of leftovers!

Breakfast on December 26th is always a French toast baked using panettone, it's the best way to make the best of all that leftover delicious Italian panettone besides freezing some for another day!

Most of the time we use up our homemade panettone since that has no preservatives and will get stale much quicker than store-bought kinds but either way, this is the best way to repurpose those gifts of bread.

I love to mix and match fruits for this great baked french toast this one has bananas, blueberries, and apples and is so delicious.

We used leftover sweet rolls also this time of the year and sometimes add leftover eggnog instead of milk.

They made the perfect baked french toast and the fruits with added cinnamon smelled awesome baking.

Also, if you want to make after Christmas even easier for breakfast, keep some throw away aluminum pans on hand so you can toss it away after breakfast, easy peasy!

Apostle's Finger's (Ricotta Crepes)

Friday, December 17, 2021
Dita Degli Apostoli aka Apostle's Fingers is a truly delicious ricotta crepe dessert of Puglia. If you're a  cannoli fan, you’ll love these.

The creamy filling of ricotta has a hint of lemony flavor that is fresh and delicious you just want to grab a spoon and keep eating.

The crepes can be made with either whole eggs or just yolks or just egg whites. Flourless, light, and very aromatic or a french style crepe that adds flour but is still light in texture.

Dark chocolate, chopped or in chips, is another popular addition to the ricotta filling (a little reminiscent of Sicilian cannoli) and is almost always accompanied by a splash of some liqueur such as Marsala wine, or even more common some Limoncello which is a lemon-flavored liqueur.

In other regions, you may find the ricotta flavored with a Kahlua coffee flavor liqueur as in a recipe for Tiramisu with toasted almonds on the ends and candied orange peel.

Depending on what part of Italy, you may find quite a variety of different fillings but more often the outside of the crepe is made with all eggs.

Either way, it's a delightful tradition around the Christmas holiday.

As I mentioned these are very similiar in flavor for the filling in a cannoli but much easier to make you may also like to try our Cannoli Pie Cannoli Mousse, Cannoli Ice Cream, Cannoli Tarts, and of course a fabulous modern-day Cannoli Dip.

Capon (Rooster) in Herb Butter

Tuesday, December 14, 2021
Italy on Christmas day in Lombardy which is Northern Italy, Capon (or rooster) is the traditional holiday roasted bird there and in our home we made both Capon for Dad and Mom's favorite meat and tradition was to roast Leg of Lamb.

This Region makes a roasted capon stuffed with a delicious chestnut stuffing and usually a roasted or boiled version of this delicious chicken.

Mom, being from Bari, always made a capon for Christmas herb coated and baked to perfection, this is her recipe.

The capon is a male chicken that is gelded or castrated, at a young age, and then fed a very rich diet of milk or porridge and is much larger than a chicken with extremely tender, juicy, and more flavorful meat.

Capon also makes one of the richest chicken soup broths I ever had using its carcass or when making the classic Wedding Soup the next day.

When serving this bird, mom would have chestnut stuffing (added to the recipe card below), potatoes, and carrots roasted and risotto.

No doubt this was a special Christmas meal only made on Christmas Day as Christmas Eve is the Feast of 7 Fishes and no meat in an Italian home.

Of course, you will find other additions to the table like Mom's lasagna, then for dessert, there was always struffoli, panettone, and zeppole.

Scroll down for the recipe and directions on how to make this fabulous Italian Traditional Capon Christmas Day meal.

Cake Mix Chocolate Spice Meatball Cookies

Friday, December 10, 2021
Grandma always made Italian Chocolate Spice Ball Cookies aka Chocolate Meatballs Cookies around the holidays, and we have adapted her recipe by using a cake mix that is super easy and absolutely delicious.

As kids, we called them chocolate meatballs cookies because they're round like a meatball.

The cookies looked so pretty frosted with white or chocolate icing with some colorful sprinkles to match the holiday theme.

These cake mix cookies stay nice and moist, are very light in texture, and have a wonderful aroma of cinnamon spice, festive flavors.

If you prefer to make this cookie recipe all from scratch try our old-fashioned chocolate spice cookies grandma used to make which is the original recipe from the 1960s.

Peanut Butter Bourbon Balls

Saturday, December 4, 2021
Peanut Butter Bourbon Balls are a wonderful no-bake candy-like cookie made with this tasty peanut butter flavored bourbon.

Homemade cookie truffles are my favorite addition to the holiday cookie tray.

These are a cousin to that classic rum ball you find on wedding trays in the 1950s.

These are a confection of melted chocolate, peanut butter bourbon, and nilla wafers.

I must warn you, it's the favorite giftable during the Christmas holiday for hard-to-buy folks.

If you need some ideas on making no-bake candy treats you hit the jackpot of recipes because you can add whatever booze you prefer whether it's rum, a favorite brandy, or whiskey of any kind, or add non-alcohol substitutes.

Add some of our other favorite treats like our Irish Potato Candy or Oreo Truffles they make a nice addition to your candy tin!

We always make a double batch these are so delicious and for best results make them at least two weeks ahead to meld the flavors.

Vintage Nougat

Wednesday, December 1, 2021
If you want to add a quick easy colorful candy to your recipe collection for the holiday, you're going to love our vintage recipe for nougat that dates back to the 1950s.

This nougat is quite different from my homemade authentic variation as it is made with white chocolate, mini marshmallows, and butter in around 5 minutes.

The original nougat was invented in the 15th century and made with egg whites whipped as we do with our recipe for Italian Torrone recipe.

This fast style nougat is very quick pillowy soft and fluffy.

Our candy can be made on the stovetop or there is a microwave version you can make as well.

Dots, gumdrops, or even jelly beans are folded into this melted nougat confection and make an absolutely stunning addition to any candy or cookie tray for the Christmas or even Easter season just by adding colorful themed candies.

No standing over a hot stove long this version is super fast and so easy and if you love quick easy confection do try our Chocolate Fudge, Amaretto White Fudge, and our Irish Cream Truffles all quick, easy family favorites.

Leftover Turkey can be used in just about all your favorite recipes, but sometimes we just can't figure out what to do with all of it so here are some great suggestions below for repurposing leftover holiday turkey.

Seriously all these recipes from Mexican, Italian and American ideas to use up that leftover turkey area are all delicious.

Take a quick look at the recipes and pick out the one you like the best that suits your family taste buds.

The best part is you can use leftover chicken or other meats you may have in any of these recipes also, just they are all very versatile, just take a look at the suggestions below also within this collection.

We love using leftover turkey or chicken plain scallopini (if there are any) for Turkey Pot Pie or Hot Covered Turkey Sandwiches, those are just a few in the roundup below we love to make.

The stuffing could also have a variety of additions added if you have some picky eaters or are not a meat lover.

Apple Bread Pudding

Saturday, November 6, 2021
What better comfort food out there for any time of the day than Apple Bread Pudding?

This baked custard is delicious as a dessert, breakfast, and whenever a creamy smooth pudding strikes your fancy.

Growing up we often had lots of leftover bread since dad worked in a bakery.

When the milk was delivered it also had an abundance of cream on top and was used with the addition to milk for mom's recipe.

Over the years I have used half and half, or a mixture of cream and milk also, no matter what your milk substitution is it will still have a nice creamy texture as long as some cream is added.

This bread pudding with apples is perfect for fall and is great served during the Thanksgiving holiday.

The recipe has many substitutions for fruits also so check out my list below for those not fond of apples or raisins.

The bread you choose to use is also optional, we love our cinnamon swirl bread or egg bread, and often at Christmas time, Grandma would use leftover Homemade Panettone.

It's a great delicious custard with an optional caramel topping, check out the printable recipe card below.

Coated with an herb wine and lemon marinade this lamb on the bone, emerges exceptional flavor.

We love using the most tender part of the lamb which is the loin however, you can use any parts with this marinade and have fantastic flavored meat that will still be tender and delicious.

The shoulder is a humbler part of the lamb and is still enjoyable.

Easy Baked Chicken Cordon Bleu

Wednesday, September 15, 2021
Easy Baked Chicken Cordon Bleu is an alternative to the fancy stuffed classic made super easy.

For years I believed that chicken cordon bleu was a French invention, but it actually originated in Switzerland as a schnitzel filled with cheese around the 1940s, originally found in a cookbook around 1949.

This copycat chicken casserole dish is a super creamy ranch in flavor topped with a creamy cheese sauce stuffed with deli ham.

The chicken is sliced thin,  lightly sauteed then cooks up fast in the sauce baked in the oven.

I love the ease of making this casserole in a throw-away pan for less cleanup.

This recipe is perfect after a holiday with lots of leftover ham left and looking for another recipe to repurpose it, this is perfect for it.

If you're a huge fan of chicken cordon bleu and simple recipes, this will be your favorite casserole and your family and friends will love it also.

Marry Me Chicken

Friday, September 10, 2021
The story online about this Marry Me Chicken dish reminds me of the song "Love Potion Number 9" since serving this meal to your partner will make them fall in love after the first bite and Marry You!.

Yes, I know a little corny but the dish is kind of dreamy with all these flavorful ingredients using a cream sauce with tomatoes, garlic, and grated cheese, and bone-in chicken thighs.

After browning the chicken on the stovetop we transfer ours to the oven with the sauce to finish baking and sprinkle a little bread crumb on top to thicken the juices up a little, this dish is always a home run for anyone that tries it.

You can substitute any bone-in meats, just be sure to check internal temperature for which types you choose to ensure it's cooked properly inside.

Sazon means seasoning in Spanish and this packet can be used in many kinds of dishes to flavor the meat like in stews, rice, and beans, and many other dishes that use onions and peppers.

No Bake Almond Joy Pie

Wednesday, September 1, 2021
No Bake Almond Joy Pie is one of the easiest and quickest desserts that will satisfy any coconut and candy lover!.

Our pie is made with mascarpone cheese, instant pudding and can be made with either a vanilla or chocolate instant pudding and any kind of crust homemade or store-bought.

I am a big fan of coconut cream pie and made both styles today, with chocolate almond joy instant pudding and vanilla and adding coconut to the filling.

My favorite is vanilla with chocolate with a regular graham cracker or Oreo crust either one is delicious or you can even bake a regular refrigerator dough pie crust which is also super yummy.

This pie is mixed in with a fluffy whipped topping to give you the creamiest slice of Almond Joy heaven.

Toasting the almonds and coconut quickly in the microwave gives this pie all the characteristics and delicious flavors of the famous candy bar then drizzle with a delicious hot fudge sauce.

This is one of those pies everyone thinks it's gourmet because it's so rich and decadent but oh so easy peasy.

Twinkie Cupcake Recipe

Tuesday, August 31, 2021
These homemade Twinkie cupcakes are a copycat from Hostess with their fluffy cream filling and sponge cake. They taste wonderful with memories from your childhood.

It seems that everything tastes different from those days made in the same factories and we combined some of the best ingredients to keep that taste and memory alive.

The sponge cake is light and airy with a wonderful vintage homemade taste and this filling is fluffy yet decadent that adds just the right combination together.

Cupcakes are easier than make and still will bring on those memories of a delicious tubular formed spongecake just like Hostess use to make but better.

The biggest difference is there are no preservatives and can't keep them fresh for weeks, these will need to be eaten quickly, but you can just freeze them on a cookie sheet for later thaw in the refrigerator even though we love to eat them frozen!

Electric Smoker Smoked Chicken Wings

Thursday, August 19, 2021
Seriously invest in an electric smoker not just for chicken wings, but for all meats if you loved smoked flavors, it's an easy alternative than the old fashioned methods and won't heat the house in the summertime.

These chicken wings(done in a Master Built Electric Grill took around 1 hour and 35 minutes making sure the internal temperature of 165 degrees was reached to ensure they were done.

Trust me we are big fans of fried chicken wings as a matter of fact I have a blog post that's super popular with 24 different kinds of wings that we love, but smoked is a nice alternative.

Smoked are super moist and delicious however you prefer super crispy you'll have to broil the skins to get that charred crispy flavor in your oven at the end there are no two ways about it.

Then you can dip them in any kind of Chicken Wings Dipping Sauces you like, they are the best of the best moist inside wings with that down-home smokey outdoor flavor.

New York Salt Potato Recipe

Tuesday, August 17, 2021
I know what you're thinking these are just a boiled potato with salt and butter, nope they're more than that and if you have never had them in Upstate New York fairs, outdoor picnics you're missing out.

The crusty salt that covers the potato makes them so delicious because the boiling with all that salt leaves a fine fabulous light white dusty coating.

These potatoes have always been one of my summertime treats at picnics especially since I often bring these boiled already and through them on a hot grill to get the skins extra crispy as shown in some of the photos below.

Living in Florida now we get to fire up the grill and make them often because buttered salt potatoes go great with any grilled meats.

Around these parts of Florida, we enjoy fresh seafood, and these are the perfect side dish, and using new baby white potatoes is the authentic original style potatoes to use.

The potatoes are rich in buttery flavor and can be a perfect side when having a delicious seafood feast! One of my favorites and often made here in Florida with lobster or crab

It's been written that salt potatoes are an iconic central New York side dish, got its start in the late 1800s, when salt was distilled by boiling water from marshes around Syracuse, N.Y. Workers, many of them Irish, would dump potatoes in the boiling vats and then have lunch.

These creamy spuds are a wonderful addition to a potato lovers recipe collection give these a try with our printable recipe below and don't forget leftovers grilled, fried, baked or mashed are outstanding too.
