If really has a great taste when fried or baked. These are baked just like pizza.

You can make your own rounds or buy them in any specialty Italian section of the supermarket.

We really like these with fresh ingredients using freshly pureed plum tomatoes.

These are made with fresh tomato sauce and topped with shredded whole milk mozzarella

Sprinkled with oregano freshly dried from our garden along with freshly chopped basil.

A pretty one for the tray around the holiday. These are simple and everyone always loves them. Little wreaths with tinted sliced almonds. All I do is add some green food coloring to the water, set the sliced almonds into the colored water until they turn green blot dry with a paper towel.


Smoked Pork Chop and Bean Soup Recipe

Probably the tastiest soup I ever made.

This soup bursts with flavors of smoked pork chops and hearty beans. This one will make you go for seconds for sure!

Smokey flavored soup pork bacon and beans a total comfort food.

Smoked Pork Chop and Bean Soup Recipe

1 lb navy beans cooked (did mine in the slow cooker click here)

1 carrot 3 cloves garlic cleaned and 2 stalks celery put through a food processor

1 12 ounces can diced tomatoes

3 or 4 smoked pork chops

1/4 cup chopped cooked bacon

olive oil

granulated garlic

salt pepper to taste

pinch of cayenne pepper

In a medium-size fry pan, add 2 tablespoons olive oil Add the pork chopped and processed vegetables into the pan saute around 3 minutes.

Add 1/2 cup water to the pan and let simmer for 5 minutes.

In a large saucepot add 4 tablespoon olive oil, granulated garlic and cooked beans. Saute for around 3 minutes. Pour the pork chop mixture into the pot, add the tomatoes and around 3 quarts of water.

Stir in bacon and salt pepper to taste.

Simmer for around 1 1/2 hours on low heat. Before serving remove smoked pork chops out of the soup cut off the bone and put back into the soup.

You can also make some pasta separately boiled like Tubertini and add to this soup.

I don't think I ever made an easier cookie than these. The versatility of this recipe is endless. Use whatever kind of mix you like with a few more ingredients and you have a full proof perfect cookie. I love this recipe!

1 funfetti cake mix (I used holiday funfetti cake mix)or any flavored cake mix you like, any brand
2 eggs
1/3 cup oil
1 teaspoon vanilla
1 cup chocolate chocolate chips and at Christmas mint chocolate chips (or use whatever you like ,chocolate and peanut butter chips are a great combination also)

powdered sugar for rolling them in

Mix the cake mix, eggs, oil, mint chips and vanilla in a bowl, mix until a ball forms. Refrigerate for around 25 minutes.

I use a meatball or melon ball scooper to form balls of dough. Roll into powdered sugar and place on a parchment lined cookie sheet or silpat mat.

Bake at 350 hot oven until the cookies are set around 10 minutes. Cool completely store in air tight container. These also freeze well.

Here is the perfect copycat recipe in a cinnamon roll made in cupcake tins for those on the go and are big fans of the famous Cinnabon rolls made in the mall.

One of the best smells to me is cinnamon in the house. These muffin rolls make your mouth water before they even come out of the oven.

During the holiday, I always make them all dressed up with a cherry on top and tinted green sliced almonds or pistachios. They look so pretty on the table at Christmas time.

My kids love cinnamon rolls. These rolls reminded them of a famous roll in the mall we would get.

Every time I make them they are so excited to dig in.

They are delicious any time of the day and being made in a cupcake tin make them portable to take along to work or on the go!

I just love using all the leftovers from our Turkey dinner for a pot pie. Check it out how easy this is and everyone goes nuts over it. It is so darn easy! One of my favorite ways to eat lamb is fried on top of stove. Amazing how delicious the lamb is with such few ingredients always look for fresh cuts, I use organic. This is an easy quick way to prepare lamb but the taste of gourmet. I usually serve this with mixed steamed vegetables and rice pilaf. 

Cabernet Lamb Chops Recipe

2 or 3 Lamb Steaks Organic (Blade, Leg or Shoulder)  
1/2 cup Cabernet Wine
3 cloves minced garlic
Sprinkle a little granulated garlic over each chop
Oregano to taste
Fresh mint optional garnish
Salt , Pepper to taste
Olive oil

Optional: 1 lb sliced fresh mushrooms

Saute the lamb on medium heat with 3 tablespoons olive oil. Fry on one side until dark crispy brown in color then turn. Add the salt, pepper to taste. Then continue to brown the flipped side. When lamb is seared add the garlic saute a few minutes then slowly pour in the wine and keep frying until the wine is reduced in half. Continue sauteing for desired doneness. Serve immediately. Garnish with mint if using.
Use the leftover oils to fry the sliced mushrooms in add more Cabernet and saute until crispy.

1 Roasted Butternut Squash Click here
Dried Cranberries
Brown sugar 
pinch of pumpkin pie spice or cinnamon 

Very easy to do follow the cutting instructions in the link above.
After you have roasted the squash, mash it.
Add to taste brown sugar, butter, salt, pepper and if you like pumpkin pie spice just a dash. Mix and sprinkle with dried cranberries.

Doll cakes are such fun for any party or event and easier than you think! I love cake decorating and this food art was the perfect creative idea. With Halloween and Breast Cancer awareness month, I needed to make something special with my family nieces and nephews in New York. I decided to visit my family this year in October which was perfect for this project. We make special food art every time I visit. These doll cakes looked over the top special for the girls and then Halloween for the boys. We always do a creative cooking project of some kind the make great memories. Something they would be able to pass on to their children someday. I love making great memories in the kitchen that will be etched in their minds for years to come when they think of Aunt Caca, that was my nickname! Thank you Kelli Kitchen for letting our family get together using your easy techniques we loved the project and it was so perfect for the girls to do this!

Baby shells, sausage in a rich homemade tomato sauce with beans. Perfect comfort food.

Pasta Sausage Fagioli Recipe

2 pound link sausage sliced 
1 pound cooked baby shell pasta to package instructions and drained (or use any small pasta like ditalini)
3 cans cannellini beans washed (or use dried cooked homemade beans around 1 pound)
2 stalked chopped celery
4 pounds fresh plum tomatoes put through food processor
3 cloves minced garlic
2 teaspoons granulated garlic
1/3 cup grated romano cheese
salt, pepper and cayenne pepper to taste
1 teaspoon fresh chopped basil
1 teaspoon fresh chopped parsley
dried oregano to taste
1 teaspoon sugar

In a large saucepan add 3 tablespoon olive oil and saute the sliced sausage links. Add the garlic, celery and stir fry for 1 minute. Add beans and the tomatoes if using fresh or (canned use 3 - 28 ounce cans plum tomatoes). Cook until the liquid evaporates around 30 minutes. Add the granulated garlic, cheese and spices, sugar to taste. 
Continue cooking until sauce is thickened around 25 more minutes. Boil the pasta and add last. Stirring to combine.

I love this cut of pork called picnic style pork roast, the meat is so versatile. This is one way we enjoy this pork roast, of course with an Italian flair. Seriously you can't over season this with herbs they make it over the top but you add as much as you like. Grilled Lemon Rosemary Salmon Recipe

I love lemon, pepper and rosemary on my salmon. This is a healthy delicious way to serve this salmon and if it's your first time trying it, well this should be the one. Great with
salt potatoes and corn on the cob for side dishes.

 Grilled Lemon Rosemary Salmon Recipe

Fresh Rosemary sprigs one per filet of salmon
Lemon slices for the bottom and tops
Teriyaki sauce 
Freshly ground pepper
Sea salt
Olive oil for drizzling
Minced garlic in olive oil

Optional: Chili powder

On an oil sprayed piece of tin foil big enough for salmon, place slices of fresh lemon on the bottom, place a good size piece of salmon on top of the lemon. Generously sprinkle with sea salt, freshly cracked black pepper and chili powder if using then top with a Rosemary sprig. Drizzle with olive oil and a drizzle of teriyaki sauce.
Place on a heated grill on medium heat and grill until the fish easily flakes with a fork. Depending on the thickness around 11 to 14 minutes for around 3 to 4  inches thick.

Red Snapper is wonderful when fresh. I am not a fan if it's been frozen but either way it's better than nothing if you can get it fresh. I enjoy it baked or fried but watching our calories this is the healthier version. I had this Grilled Chicken Peppers Caprese Sandwich while on a vacation and decided to recreate it at home, it was better than the first time I tried this!

After tweaking it just a bit and making a flavorful baked chicken first, this is now my all-time favorite caprese sandwich gourmet style!

The biggest difference is how I cooked the chicken, I baked it with lime juice instead of fried it.

I have to say this is one fantastic tasting sandwich!

Easy Chocolate Italian Spiced Rum Cake Recipe

This is one of those epic fail attempts! I forgot to grease the pan heavily on my swirly pan and my cake fell apart! So a chocolate rum cake to the rescue was born. This is a simple semi homemade cake. One I had often when I lived in Upstate N.Y. with pudding, almonds and yellow cake filled with either strawberries and pudding or even bananas in the pudding. I made it simple no fruit since I was traveling with it. The cake is famous at a local bakery in Upstate Utica N.Y. called the Florentine.

I was planning on bringing a pretty swirly cake at first to my cousins house (Karen and Bill). They invited us to dinner around 3 hours away from us on our way to Sanibel Island for Vacation. The cake didn't make it out of the pan, after I saw it crumble I had to think fast! Turns out to be the best mistake I ever made! When it all fell apart I went ahead and made one of the most delicious Italian Rum pudding cakes and

all chocolate was another bonus! Hopefully they will never find out it was suppose to be a pretty swirly cake (smile).

My cousin Karen Grimmer and I. We had a great time in Sanibel Island together. Karen and her husband Bill made us a great dinner! We had pork and pineapple kabobs on the grill, salad, coconut rice and a great bottle of wine. The perfect dinner to kick off our vacation. Thank you both we just loved your home!

Sanibel Island Florida is just beautiful! I had to snap this shot going over the causeway, just breath taking after dinner on the way to our West Wind Inn. A great place to stay!
My anniversary week vacation I can imagine even how much better the photo would have been if I had my camera! This shot was through a dirty window and from my phone! Go figure!!!

Before you get started here are some suggestions.

 Note Options: You can make this all white or yellow layer cakes, split and fill with vanilla pudding. Add Strawberries on top of the vanilla pudding or bananas on top of the chocolate pudding in a chocolate split layer cake between layers. Using 9 inch cake pans Don't forget to toast the almond! Soak both cakes with the same Rum syrup below before adding the pudding.
Easy Chocolate Italian Spiced Rum Cake Recipe

1 chocolate cake mix made to package instructions. 

  In the meantime make below: 

1 box cooked chocolate pudding made to package instructions and cooled. I used the larger size pudding box.

Then make the syrup below:

Rum Syrup:

1/4 cup butter
1/4 cup water
1/4 teaspoon of allspice or cinnamon
3/4  cups sugar
1/2 cup any white Rum (My cousin Bill said it could use more Rum try 1 cup instead of 1/2 a cup if you love Rum it can't hurt right?)

In a medium saucepan, place the butter, water, sugar and spice in the pan and cook until sugar dissolve around 4 minutes.
Remove from heat stir in the rum.

Pour  syrup over warm chocolate cake that has been broken up into pieces and into a container or large trifle bowl (layered looks beautiful).  Cool. Spread the pudding on top.  Refrigerate until cold. Scoop into small glass dessert dishes.  Top with whipped cream or serve with a frozen confection of chocolate gelato and chocolate fudge syrup on top. 

           Perfect place to vacation and we can't wait to go back!
